- Raw pumpkin seeds: You can buy a pack from the store or just use the ones that you have after using a fresh pumpkin. (purchased or from fresh pumpkins)
- Olive oil: To help the seasonings stick. You can also use avocado oil or melted butter if you want to.
- Seasonings: I used a mix of brown sugar, cinnamon and some kosher salt. You can also use the classic cinnamon sugar if you want.

- Keep it simple and just use some garlic salt, garlic powder or black pepper, or use my homemade BBQ rub to bring a nice smoky, savory kick to the seeds.

How to Make Air Fryer Pumpkin Seeds
Start by preheating your Air Fryer to 370 F. Grease the Air Fryer basket with nonstick cooking spray or line it with Air Fryer parchment paper.
- In a large mixing bowl, combine the oil, seasonings and pumpkin seeds. Mix them well until all the seeds are nicely coated, then transfer them to the Air Fryer basket in a single layer.
- Air fry at 320 F for 10-12 minutes, tossing the seeds halfway through cook time. Add an additional minute or two for more crispy homemade pumpkin seeds.

- Air Fryers cook differently. This recipe was made using a Cosori Air Fryer. If you’re using a different Air Fryer, you may need to adjust the cook time by a minute or two, more or less time.
- Make sure you thoroughly clean the pumpkin seeds if you’re using them fresh. The best way to do this is to boil them for a few minutes, remove any residual flesh around them and pat them dry before using them.
- If you don’t want to flesh out fresh pumpkin seeds, you can also find seeds for this dish at your local market.
- Spread the seasoned pumpkin seeds in a single layer in the Air Fryer basket. Allow the hot air to circulate nicely and crisp them up. This is what I always do when I make my Air Fryer sugared pecans and Air Fryer Chex Mix.

Roasted pumpkin seeds will stay fresh for a couple of days at room temperature when stored in an airtight container with a sealed lid.
You can also store roasted pumpkin seeds in an airtight container in the refrigerator for up to a week, or in the freezer for about three months.
When you remove the seeds from the pumpkin, they are a little slimy. That’s why we boil them in a few cups of water to help remove any leftover strings or pumpkin flesh. If they aren’t completely cleaned off, that’s ok. Just try to remove as much as possible so the the small stringy pieces don’t burn in the Air Fryer.
Allow the seeds to cool down completely first- they become more crunchy as they cool down. If they still haven’t crisped up, it could be due to additional moisture. You can air fry them for a few more minutes if you want to.

Air Fryer Pumpkin Seeds
Equipment

Ingredients
- 1 cup pumpkin seeds
- 1 Tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cinnamon
- 1 Tablespoon brown sugar
Instructions
- Carefully remove the pulp from the pumpkin and separate the pumpkin seeds from the pulp. Boil the seeds for a few moments in a pot of boiling water to help remove the pulp. You may need to run the seeds and any pulp through running water in a colander to help remove any remaining pumpkin flesh after boiling.
- Once the seeds have been cleaned, place the clean pumpkin seeds on a paper towel and allow them to dry.
- Preheat the Air Fryer to 370 degrees Fahrenheit. Prepare the air fryer basket with nonstick cooking spray if needed.
- Place the fresh pumpkin seeds in a large bowl and coat with olive oil. Once the seeds have been coated in oil, add the kosher salt and brown sugar. Toss until the seeds are fully coated.
- Place the prepared pumpkin seeds in a single layer in the prepared air fryer basket.
- Cook on 320 degrees Fahrenheit for 10-12 minutes, tossing the seeds halfway through cook time. Add an additional minute or two for more crispy homemade pumpkin seeds.
