To roast these cinnamon sugar pumpkin seeds in the air fryer you only need to have a few pantry staples on hand. You're going to love how easy this pumpkin seeds recipe is to make.
- raw pumpkin seeds (purchased or from fresh pumpkins)
- olive oil- or avocado oil, or melted butter
- kosher salt
- brown sugar
Carefully remove the pumpkin pulp (pumpkin guts) from the pumpkin and then separate the seeds from the pulp. Add to a pot of water and boil for a couple of minutes to remove the pulp. (When done, you may need to rinse the seeds through running cold water in a colander to help remove any remaining pumpkin flesh after boiling.)
Once rinsed, dry pumpkin seeds on a paper towel or kitchen towel.
Preheat the Air Fryer to 370 degrees Fahrenheit. Prepare the air fryer basket with nonstick cooking spray or line with air fryer parchment paper.
Transfer pumpkin seeds in a large sized bowl and coat with olive oil. Once the seeds have been coated in oil, add the kosher salt, cinnamon, and brown sugar. Toss until seasonings have coated seeds.
Place the seasoned pumpkin seeds in a single layer in the prepared air fryer basket. Air fry at 320 degrees Fahrenheit for 10-12 minutes, tossing the seeds halfway through cook time. Add an additional minute or two for more crispy homemade pumpkin seeds.
Air Fryers cook differently. This recipe was made using a Cosori Air Fryer. If you're using a different Air Fryer, you may need to adjust the air frying cook time by a minute or two, more or less time.

- 1 cup pumpkin seeds
- 1 Tablespoon olive oil
- ½ teaspoon kosher salt
- ½ teaspoon cinnamon
- 1 Tablespoon brown sugar
