I'm a firm believer that you can enjoy this as a main dish, too! These cheesy scalloped potatoes are one of those air fryer recipes that can be enjoyed any way that you want. Why limit yourself when you don't have to?
You'll want to have a mandolin for this recipe so you can cut the potatoes thin.
I also like to use a silicone baking dish to make cleanup a breeze.
Other than that, you just need a few simple ingredients to make this delicious side dish.
Ingredients
- Russet potatoes (I also use Yukon Gold)
- Queso block cheese
- Cream cheese
- Butter
How to Make Scalloped Potatoes in the Air Fryer:
- Use a mandolin to carefully slice the potatoes to a ⅛” thickness.
- Rinse, and drain the potatoes.
- Combine the queso cheese, cream cheese, and butter in a small pan and heat on medium/low heat.
- Heat cheese and butter on the stovetop until they are melted and combined.
- Add the baking dish to the air fryer basket.
- Add a layer of sliced potatoes to the bottom of your shallow cooking dish.
- Top with ⅓ of the cheese and butter mixture.
- Add another layer of potatoes, and top with cheese until you’ve finished layering your dish.
- Air fry scalloped potatoes at 320 degrees Fahrenheit for 15-18 minutes, or until the tops of the potatoes and cheese are golden brown.
- Allow the dish to cool for a few minutes and top with fresh parsley before serving.
NOTE: I make this recipe in my Cosori 5.8 qt. air fryer or 6.8 quart air fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.
Variations
Change the type of cheese - You can use white cheddar, parmesan cheese, gruyere cheese, sharp cheddar cheese, Colby jack, and any other type of cheese that you want for these funeral potatoes. Lots of cheese followed by another layer of cheese is not a bad idea at all!
Use sweet potatoes or Yukon Gold- If you want to change up this potato bake, you can make air fryer potatoes using sweet potatoes or Yukon Gold. It's the perfect way to make a classic side dish for holiday dinners or weeknight meals.
Add toppings - If you have leftover ham, that can be a great addition to the first layer of potatoes. You can also add sour cream and even chop up thick slices of bacon and sprinkle them on top, too.
How to Serve
These cheesy potatoes are simple to serve! Just scoop out the layers of potatoes from the air fryer basket, and all the potato slices to a plate. You can top this potatoes recipe with cheese, salt, garlic powder, pepper, and more!

Can I make this in the slow cooker?
Using the air fryer is best to get the top of the potatoes nice and crisp! Potato dishes like this are best cooked up in the air fryer so that they don't turn soggy and mushy. The air fryer cooks the top half of the potatoes and the bottom perfectly!
What are the best potatoes to use?
I like using Russet potatoes or this recipe, but you can use Yukon gold potatoes as well. Just make sure that you clean the potatoes well and slice them to the correct thickness so that they cook the best.
