INGREDIENTS

  • Potatoes (I used Russet Potato)
  • Olive oil– or avocado oil
  • Kosher salt
Uncooked potatoes on a white plate with olive and salt ingredients on the table.

DIRECTIONS

STEP 1
When you make these crispy potato chips, you should begin with washing the potatoes. Then use a mandolin slicer or sharp knife and slice the potatoes into ⅛ inch slices.

STEP 2
Try to get them as close to the same thickness as possible. Having uneven slices can make them cook differently.

STEP 3
Place the potato slices in a medium bowl of water. Let them soak for at least 30 minutes. The water will get cloudy as they soak. After they have soaked, drain potatoes and rinse them again in cold water and pat dry with a paper towel.

STEP 4
Toss the potato slices in the olive oil, and season with salt. Next, place the slices in a single layer in the air fryer basket. Set your oven to Air Fry at 380 degrees Fahrenheit. Cook for 10-15 minutes, depending on the thickness of the cut. Shake the basket halfway through cook time. Cook the chips until they begin to turn golden brown.

EXPERT TIPS

  • For even crispier chips, soak the potatoes in water bath or water with ice twice to remove as much of the natural starch as possible.
  • They will become more firm as they cool, in about 3-5 minutes.
  • For additional seasoning, you can add onion powder, garlic powder, barbecue seasoning, ranch seasoning, vinegar powder, chili powder, or just black pepper and salt.
  • To avoid soggy potato chips, or burned chips, try to have them sliced as evenly as possible. Watch the cooking time the first time you make this recipe.
  • Keep the potato chips in an airtight container for up to 10 days.

FAQ’s

What potatoes are best for making air fryer chips?

When making homemade potato chips, use baking potatoes, such as Russet or Yukon Gold Potatoes.

Why do you soak slices in water before frying?

Soaking the potato slices in a water bath, removes excess starch, and helps the chips to be crispier. The less starch content, the crispier the chips. I soak mine in the coldest water possible.

Can you make these with sweet potatoes?

  2. Kim says:

I would think that the slices would be so light that they would fly around? How do you prevent that?

    1. Rebecca says:

Hi Kim. The slices are thin, but they have a light coating of oil and salt so they didn’t fly at all.
