These air fryer stuffed mini peppers are filled with a cream cheese filling, then air fried to perfection. Best of all, these stuffed mini peppers are naturally low carb. With a simple combo of cream cheese, cheddar, and crispy bacon, they’re full of flavor and totally keto friendly.

I’ve made these air fryer stuffed mini peppers more times than I can count and they are always a hit. Whether you’re serving them as a snack, game day appetizer, or party bite, they’re always a hit.

I love making delicious and easy appetizers in the air fryer, and these bites are are both! If you love simple party foods, you have to try these air fryer chicken wings, or these air fryer jalapeno poppers too!

Ingredients You Will Need

  • Mini Sweet Peppers- About 1 pound, sliced in half and seeds removed.
  • Cream Cheese- 8 ounces, softened for easier mixing.
  • Shredded Cheddar Cheese- 1/2 cup, or use a cheese blend.
  • Cooked Bacon- 4 slices, crumbled (optional but delicious).
  • Garlic Powder- ½ teaspoon, for flavor.

Variations

  • Swap cheeses: These peppers are delicious with cheese, so swap in your favorite!
  • Make for Taco Tuesdays: Add seasoned ground beef or taco meat to the filling and then top with hot sauce. 
  • Pizza Style: Add mini pepperoni slices, a sprinkle of Italian seasoning, and mozzarella cheese, to make bite-sized pizzas.
  • Vegetarian: Leave out the bacon and add your favorite veggies like finely chopped mushrooms, jalapenos, green onions, or spinach.

How to Cook Stuffed Mini Bell Peppers in the Air Fryer

STEP 1: In a bowl, mix the softened cream cheese, shredded cheddar, crumbled bacon, and garlic powder, and stir until well combined.

STEP 2: Slice each mini pepper in half lengthwise and remove the stem, seeds and membranes.

STEP 3: Fill each pepper half with a spoonful of the cream cheese mixture, smoothing it out with the back of a spoon.

STEP 4: Place the stuffed peppers in a single layer in the air fryer basket. Air fry for 5-7 minutes or until the peppers are slightly charred and the filling is warm and bubbly.

STEP 5: Let cool for 2-3 minutes before serving.

Tips 

  • Use softened cream cheese: This will make mixing the ingredients together much easier and the filling will have a creamy smooth texture.
  • Don’t overfill the peppers: Just fill them to the edges of the peppers to prevent the cheese from melting out while air frying.
  • Check during air frying: Not all air fryers cook the same to be sure to check them halfway through cook time the first time you make this recipe to avoid overcooking.

FAQs

Can I make these ahead of time?

Yes! You can prep the peppers and filling up to a day in advance. Store them covered  or in an airtight container in the fridge and air fry just before serving.

Do I need to spray the air fryer basket?

No, not usually. The natural oils from the peppers and cheese help prevent sticking, but a light spray of olive oil can be used if you prefer.

Can I reheat leftovers?

Definitely! Pop them back in the air fryer at 350 degrees F for 3-4 minutes until warmed through.
