Zucchini fries are simply small, thin strips, cut from zucchini. Then you batter and air fry them, until they are golden brown and crispy. They are a great side dish or snack, and can even be a fun appetizer before dinner!

WHY I LOVE THIS RECIPE
I love this air fryer zucchini fries recipe because it's easy to make, and is more nutritious than greasy French fries. One or two zucchini can make an entire batch, and they get eaten pretty quickly in our house. They are also a fun way to eat veggies.
The air fryer makes these fries crispy and golden brown, with the bread crumbs and seasonings adding just the right amount of flavor. The parmesan cheese adds an extra crispness to the coating that makes these cheesy fries even better!

INGREDIENTS
- fresh zucchini- 2 medium zucchinis make a batch for 4 people
- all purpose flour
- Italian seasoning
- garlic powder
- kosher salt
- eggs
- panko bread crumbs
- grated parmesan cheese
DIRECTIONS
STEP 1
Rinse and then pat zucchini dry. Using a sharp knife, cut the zucchini into sticks, about 4-5 inches long, and ½ inch thick.
STEP 2
Set up three separate bowls for dipping. (Shallow dishes will be easiest.) In the first bowl, add the flour, Italian seasoning, garlic powder, and salt. Stir ingredients together.
STEP 3
In the second bowl, whisk together the eggs. And in the third bowl, mix together the breadcrumbs and parmesan cheese.
STEP 4
Coat the zucchini sticks in the flour, then dip them into the whisked eggs, and finally into the cheese and bread crumb mixture.
STEP 5
After coating the zucchini pieces, place them into a lightly sprayed air fryer basket. Once all of the zucchini has been coated and placed in the air fryer, air fry zucchini at 380 degrees F for 8-10 minutes until golden brown and crispy.
EXPERT TIPS
Slice the zucchini as evenly, and uniform sized as possible. Equal-sized pieces will help them cook evenly. Trim any uneven ends or slices.
Lightly spray the basket with nonstick cooking spray, olive oil spray, or use air fryer parchment paper liner so the fries don't stick to the basket, and to help make clean up easy.
Place the fries in a single layer, without stacking or overlapping. If they don't fit easily, make the fries in batches.
Shake or toss the fries during the air frying process, so both sides of the fries are able to cook evenly.
I make these in my Cosori air fryer. Some air fryers have different wattages, so cooking time may need to be adjusted by a 1-2 minutes.
VARIATIONS
To save a little time, you can use Italian seasoned breadcrumbs or panko breadcrumbs and skip adding the seasonings. You can also try different breadcrumb mixtures using crushed crackers or even season and make your own breadcrumbs by crushing these air fryer croutons to change up the texture.
You can also use gluten-free breadcrumbs or almond flour for regular flour for a gluten free option.
Serve these zucchini fries with a variety of dipping sauces like marinara sauce, ranch dressing, blue cheese dressing, or whatever your favorite dipping sauce may be. There really isn't a wrong option!
Add cayenne pepper or chili powder if you want to have an extra pop of flavor with a little bit of heat to your fries. You can also use other seasonings like taco seasoning, ranch seasoning, Cajun seasoning, thyme, or rosemary for fries with a savory flavor.
Swap out the parmesan cheese for nutritional yeast. It's a great healthy alternative to cheese.
STORAGE AND REHEATING
These zucchini fries are best when they are first made. But if you happen to have leftovers, wrap or store leftover zucchini fries in an air-tight container and keep in the fridge for 3-4 days.
To reheat fries, return them to the air fryer, and air fry at 380 F for 3-5 minutes until they are crispy and heated through.
FAQS
Rinse and pat the fries dry with a paper towel before coating. Try and remove any excess water and this will help them get crispy while air frying.
You can cut the zucchini into spears or you can slice zucchini if you don't want them as a French fry shape.
Absolutely. Zucchini is a delicious green vegetable, but yellow zucchini are yummy too! They are shaped a little differently and might be a tad sweeter, but they are a great substitute for these fries.
Because I like recipes that save time, I don't peel the zucchini first. However, you can easily peel them first if you prefer.
