- Fresh Zucchini-medium size zucchini work best
- Pizza sauce
- Mozzarella cheese
- Pepperoni- mini pepperonis, like these Hormel pepperoni work perfectly, or add other favorite pizza toppings
How to make Air Fryer Zucchini Pizza Boats

To begin, rinse and pat zucchini dry. Cut each zucchini into halves, lengthwise. Then use a small spoon or melon baller, and remove a small amount of the center of each zucchini slice, making a small well.

Fill the hollowed zucchini boat with pizza sauce, then add shredded mozzarella cheese. Add pizza toppings such as pepperoni, Italian sausage, or other favorite toppings. Place stuffed zucchini boats into the air fryer basket without stacking or overlapping.

Air fry at 350 degrees F for 10-14 minutes cook time. Zucchini should be fork tender when done.

Serve immediately. I love dipping these pizza boats into marinara sauce or even ranch dressing.
