DIRECTIONS
STEP 1
Prepare the basket by lining it with air fryer parchment paper, or use cooking spray on a small cookie sheet if you are using an air fryer with trays.
STEP 2
To make the batter, use a stand or electric mixer and a large mixing bowl, to cream together the butter with the sugar. Mix together until smooth and creamy. Then, add in the eggs and vanilla. Continue mixing on medium speed until the mixture is light and fluffy.
STEP 3
In a medium bowl, combine the flour, salt, cinnamon, baking powder, and baking soda. Then slowly add to the butter and sugar mixture. Beat together on medium to high speed until well combined.
STEP 4
Pour in the oat and raisins, stirring into the dough, until evenly distributed.
STEP 5
Use a portion scoop or large spoon to scoop cookie dough, and then drop dough into the air fryer basket. Lay cookies inside the basket in single layer, and leave about 1 inch in between the batch of cookies for room to spread.
STEP 6
Air Fry at 300 degrees Fahrenheit for 5-6 minutes, until the cookies are golden brown. Before removing cookies from basket, let them rest for 1-2 minutes to become firm.
I use a Cosori air fryer. Because brands of air fryer are different, cooking times may vary depending on air fryer wattage and brand.

ROLLED OATS VERSUS QUICK OATS
Both are oats, but they just have a different way of being processed. Rolled oats are steamed first, so in my opinion, they are lighter and fluffier. You can use either type for this recipe, but quick oats may give you a drier cookie that looks a little flatter and smaller. There are rolled quick oats, and those are perfect to use to make these cookies!
EXPERT TIPS
When making these cookies, if you don't have room for spread in your air fryer basket, chill the dough for about 30 minutes before cooking.
When removing the cookies, they can be soft when warm. Letting them sit for a few minutes, helps them to slightly firm. You can lift the piece of parchment paper liner with the cookies for easier removal and then transfer them to a wire rack to continue cooling.
STORING LEFTOVER OATMEAL COOKIES
If you have leftover cookies, keep them stored in an airtight container for 2-3 weeks. You don't need to store them in the fridge. You can also wrap the cookies and store them in the freezer, for up to a year.
FAQS
If you like your cookies a little chewier, use half granulated sugar and half brown sugar. The brown sugar has more moisture and will help the cookies be chewier when they are done air frying.
I prefer using butter when baking, but sometimes it can be expensive. You can substitute margarine, only use sticks, not from a tub, and keep in mind the fat content can vary, so the cookies may spread differently than if using real butter.
The cookies will be very hot, therefore also very soft when they are first done air frying. You will want to let them sit for a few minutes, away from the air fryer so they can firm up. I carefully lift opposite corners of the parchment paper and then let that sit on the counter so they can cool and firm up while I cook the next batch on a new piece of parchment paper. Then I rotate the parchment paper pieces in each batch.

My peanut butter cookies were still raw on bottom. Any suggestions?
Becky Abbott
Hi Cid! It could depend on the type of air fryer you are using. If they are still uncooked on the bottom, try lowering the temp a bit, and then adding a few more minutes. Also- are you using "bake" or "air fry" feature? I use air fry because the fan goes a bit faster so that can make a difference too. Cookies should air fry in 4-6 minutes max. Let them sit in the basket for a minute or two to firm up. Hope that helps!

The tastiest oatmeal raisin cookies I've made (and the only ones I've ever done in an air fryer)! I added chopped walnuts and dried cranberries and they went down a real treat. I had to cook a bit longer (8 mins at 160C) because they were still raw in the middle otherwise. But I guess everyone's air fryer is a little different 🙂 thanks for the recipe!
