Ingredients:
- Rotisserie chicken (2 cups shredded)
- Cream cheese (softened)
- Mexican cheese (shredded)
- Taco seasoning
- Corn tortillas
- Avocado oil (spray) (*Can also use olive oil)
- Salsa, guacamole, and queso for serving
How to make Crispy Air Fryer Chicken Taquitos
- In a large bowl, combine the shredded chicken, cream cheese, and taco seasoning. Mix well.
- Fold in the Mexican cheese until just blended.
- Warm the tortillas in the microwave for about 30 seconds, or heat them on a skillet over low to medium heat on the stovetop.
- Scoop 2 Tablespoons of the chicken and cheese mixture onto a corn tortilla. Wrap the tortilla, and repeat until all taquitos have been made.
- Add the taquitos into the air fryer basket in a single layer. Spray the tops of the taquitos with the avocado oil spray.
- Air fry the chicken taquitos at 400 degrees Fahrenheit for 5 minutes, flip and spray with oil, and air fry for an additional 2-3 minutes or until desired crispiness has been reached.
- Serve with salsa, guacamole, sour cream, and queso.
