WHY YOU WILL LOVE AIR-FRIED BUTTERNUT SQUASH

You will love this air fryer butternut squash recipe because it is an easy way to have a roasted butternut squash as a great side dish for the holiday season. With almost no meal prep time, it is a fast and healthy way to cook your favorite vegetable.

INGREDIENTS

Ingredients to make butternut squash in the air fryer. Garlic, olive oil and seasonings.
  • Cubed Butternut squash- peeled, then sliced in half, and then cut squash into bite size cubes
  • Virgin Olive oil- I use Bertolli’s, or you can also use melted better
  • Minced Garlic- or garlic powder
  • Kosher Salt- season with salt to your taste preference
  • Ground Black Pepper

HOW TO MAKE BUTTERNUT SQUASH IN AIR FRYER

STEP 1
First, use a sharp vegetable peeler and peel the butternut squash skin. Use a sharp chef knife, and cut squash halves, lengthwise, and then remove all seeds.

STEP 2
Cut the squash into cubes about the size of dice. I try to do 1-inch cubes. You can skip the steps if you use pre-cut butternut squash cubes.

STEP 3
In a large bowl, add the butternut squash cubes, and then toss the squash with olive oil and seasonings.

STEP 4
Once the pieces of squash are well coated, in a single layer, pour seasoned squash pieces into the air fryer basket or onto baking sheet for a rack air fryer.

STEP 5
Air fry butternut squash 400 degrees F for 16 to 18 minutes cook time, until squash is crispy and fork tender to your liking. Shake the basket halfway during the cooking process.

STEP 6
Season cooked squash with additional salt and pepper to taste. Garnish with fresh parsley if desired.

TIPS

If using a larger squash, cook in two batches so the squash is not too stacked or overlapping while cooking. Because all air fryer are different, cooking times may vary.

To help with even cooking, try and cut the slices or cubes in the same size.

VARIATIONS

For additional flavors, you can use any extra seasonings you prefer. 

SPICE BUTTERNUT SQUASH– For a pinch of heat, add a dash of chili powder and paprika.

SAVORY BUTTERNUT SQUASH- Toss the squash with spices and seasonings like rosemary, thyme, onion powder or garlic. 

SWEET BUTTERNUT SQUASH– For more sweet flavors, add ½ teaspoon of cinnamon and brown sugar, or nutmeg. You can also use 1-2 tablespoons of butter or maple syrup and then add a tablespoon of brown sugar or maple syrup and then air fry.

STORING AND REHEATING

If you have leftovers, then you can store in an airtight container and keep in the fridge. Make sure it’s cooled down to room temperature before storing. 

To reheat, return leftover squash to the air fryer and air fry for 3-5 minutes until heated and crispy.

Try to cut pieces into similar sizes to help ensure even cooking. If using large pieces, cooking times may need an extra minute or two.
