This recipe makes delicious air fryer butternut squash with just a few simple ingredients. This crispy roasted squash is a perfect side dish for almost any meal.

You will love this air fryer butternut squash recipe because it is an easy way to have a roasted butternut squash as a great side dish for the holiday season. With almost no meal prep time, it is a fast and healthy way to cook your favorite vegetable.

Roasted Butternut Squash goes great with Air Fryer Duck, Lamb Chops, or Whole Roasted Chicken.

Ingredients for Air Fryer Squash

Ingredients to make butternut squash in the air fryer. Garlic, olive oil and seasonings.
  • Cubed Butternut squash- peeled, then sliced in half, and then cut squash into bite size cubes
  • Virgin Olive oil- I use Bertolli's, or you can also use melted better
  • Minced Garlic- or garlic powder
  • Kosher Salt- season with salt to your taste preference
  • Black Pepper

How to Make Air Fry Butternut Squash

  1. To make this easy air fryer recipe, use a sharp vegetable peeler and peel the butternut squash skin. Use a sharp chef knife, and cut squash halves, lengthwise, and then remove all seeds.

  2. Cut the squash into cubes about the size of dice. I try to do 1-inch cubes. You can skip the steps if you use pre-cut butternut squash cubes. 

  3. In a medium mixing bowl, add the butternut squash cubes, and toss squash with olive oil and seasonings.  Orange butternut squash in a glass bowl being mixed with seasonings with a wooden spoon

  4. Once pieces of squash are well coated, in a single layer, pour seasoned squash pieces into the air fryer basket or onto baking sheet for a rack air fryer.Orange squash but into cubes and seasoned in the air fryer basket.

  5. Cook butternut squash on Air Fry, at 400 degrees for 16 to 18 minutes cook time, until squash is crispy and tender to your liking. Shake the basket halfway during the cooking process.Crispy butternut squash in the air fryer basket after being cooked

Season cooked squash with additional salt and pepper to taste. Garnish with fresh parsley if desired. 

Notes: 

I make this in a Cosori 5.8 quart air fryer oven with air frying basket. I was able to fit all of the medium butternut squash and cook in one batch. If using a larger squash, cook in two batches so the squash is not too stacked or overlapping while cooking. Because all air fryer are different, cooking times may vary. 

For additional flavors, you can use any extra seasonings you prefer. For a pinch of heat, add a dash of chili powder and paprika, or for more sweet flavors, add ½ teaspoon of cinnamon and brown sugar, or nutmeg. There are so many extra seasonings you can use.

What are the benefits of Butternut Squash?

Butternut squash is filled with vitamins, minerals, and antioxidants. It is also pretty low in calories, and high in potassium. I love this squash because it can be made to be sweet or savory.  This winter squash is also naturally gluten-free and high in fiber, which is perfect for dieting on whole30 or paleo diets.

Do I need to peel the squash first?

Technically, you can roast the squash with the skin on. I personally feel like the crisp is better when peeled. Later, if you want to use leftovers for Butternut Squash Soup, it should be peeled, so I suggest peeling it. 

Can I use frozen butternut squash?

You can. But it isn't as crispy as this recipe using fresh squash.

Can I reheat this squash?

I reheat leftovers at 400 degrees F for 5 minutes. They aren't as crispy as when they are first made, but they are still good. 

Can I make this sweet instead of a savory?

Yes. If you prefer a sweet version instead of savory version, use 1-2 tablespoons of butter or maple syrup and then add a tablespoon of brown sugar or maple syrup and then air fry.
