Ingredients needed:

- flour tortillas
- shredded Cheese- like Tillamook Cheese
- olive oil
Choice of fillings: refried beans, black beans, onions, bacon, fresh herbs, bell peppers, tomatoes, pepperoni, mushrooms, kale, black olives, chopped garlic. For a breakfast quesadilla, add scrambled eggs.
Optional favorite toppings: adobo sauce, sour cream, salsa verde, hot sauce, guacamole, pica de gallo or Greek yogurt with a splash of lime juice.
Optional spices: cayenne pepper, garlic powder, curry powder, red pepper flakes or Italian seasoning.
How to Make Cheese Quesadillas in Air Fryer:

Remove tortillas from packaging and spray one side of each tortilla with cooking spray or brush with olive oil.

Place each tortilla in air fryer basket, sprayed side down.

Spread a thin layer of shredded cheese, and optional toppings on top of tortilla.

Fold each tortilla in half and gently press together or seal them with a toothpick.

Air fry at 350 degrees F for 5-7 minutes, flipping the tortilla halfway through cooking time, until you have a crispy tortilla that is golden brown. After two minutes of air frying, check quesadillas. If tortillas have opened, gently press into the melted cheese to secure them together.

Remove tortillas and serve immediately or let them rest on a wire rack to maintain crispiness.
I make this recipe in my Cosori 5.8 qt. air fryer. Depending on your air fryer size and wattages, cooking time may need to be adjusted 1-2 minutes.

I like to keep this a simple recipe and make it with cheese. Chicken quesadillas just need shredded chicken and any favorites, such as black beans, corn, roasted chicken, roasted veggies, ground turkey, shredded beef, jalapeño, poblano, and banana peppers to add a little heat.
