Air fryer hasselback potatoes are a tasty side dish that is air fried to a crispy perfection. Perfectly cooked potato on the inside and crispy edges make this one of my favorite ways to make this delicious side dish.
Why I Love This Recipe
Hasselback potatoes are made with medium-sized baking potatoes, typically medium Russet potatoes.
To create the hasselback potato, you slice the tops of the potatoes with the skin on in ¼" sections to make accordion potatoes. Add your favorite seasonings, and bake! You can even add different toppings to make this more of a meal on it's own and serve it as a main dish.

- olive oil
- salt
- black pepper
- garlic powder

How to Make Hasselback Potatoes in the Air Fryer
Step 1
Preheat Air Fryer to 350 degrees. Prepare the Air Fryer basket with nonstick cooking spray, olive oil spray, or parchment paper.
Step 2
Slice the potatoes into ¼" sections, making thin slices, but be careful not to cut all the way through the potato.
Step 3
Add olive oil and seasoning to a small bowl and mix well until combined.
Step 4
Use a pastry brush and brush half of the mixture onto the potato slices.
Step 5
Place potatoes in a single layer in the air fryer basket.
Step 6
Bake the potatoes at 350 degrees Fahrenheit for 20 minutes. Open the basket, brush the remainder of the mixture to the potatoes and continue to cook for an additional 20 minutes.
Step 7
Remove from the Air Fryer and sprinkle parmesan cheese and fresh parsley before serving.
Tips
- When slicing the potatoes, use a cutting board and two chopsticks. I place the chopsticks down on the cutting board and then cut the potato, stopping at the chopstick before hitting the cutting board. It helps get those thin slices and not cut all the way through the potato.
- I use a Cosori Dual Blaze air fryer, so I never have to flip my potatoes during the cooking process.
- Add toppings to change up the flavors and make them different each time.
Variations
- Potatoes. Use different potatoes! We love to use Russet, but you can also use Yukon gold, red potatoes, or even sweet potatoes.
- Butter. Use olive oil or substitute melted butter for a richer-tasting hasselback potato.
- Flavors. I love to use a mixture of seasonings, but you can change things up with different flavors such as Italian seasoning or adding garlic butter.
- Toppings. Use different toppings to change up the flavors and texture. Consider toppings such as a dollop of sour cream, bacon bits, fresh herbs, fresh chives, or slices of cheese.
Storage and Reheating
- Storage. Store any leftover hasselback potatoes in an airtight container in the refrigerator for up to 3 days.
- Reheating. Reheat hasselback potatoes in the air fryer at 350 degrees Fahrenheit for 4-5 minutes, or until fully heated through.
