Easy Air Fryer Zucchini Pizza Boats Recipe
Air fryer zucchini pizza boats are my favorite variation to pizza. When I'm trying to eat healthy, I still get all of the flavors of one of my favorite meals, just without the bread! The zucchini makes it low carb, but I don't feel like I'm missing any of the flavor.
This recipe is also super easy to make. With just a couple of zucchini, you will will plenty of pizzas for everyone, making this a perfect meal for busy weeknights.

Ingredients You Will Need for Air Fryer Zucchini Boats
- Fresh Zucchini-medium size zucchini work best for the base of this pizza.
- Pizza sauce- one of the main ingredients for the pizza boats, and adds flavor to the recipe.
- Mozzarella cheese- gives the pizza boats the pizza flavor, along with a gooey cheesy taste.
- Pepperoni- mini pepperonis, like these Hormel pepperoni work perfectly, or add other favorite pizza toppings
How to make Zucchini Pizza Boats in Air Fryer
Step 1: Rinse and pat zucchini dry with a paper towel. Then cut each zucchini into halves, lengthwise. Use a small spoon or melon baller to remove a small amount of the center of each zucchini slice, making a small well.
Step 2: Fill the hollowed zucchini boat with pizza sauce, then top with shredded mozzarella cheese. Add your favorite pizza toppings such as pepperoni, Italian sausage, sliced mushrooms, etc.
Step 3: Place stuffed zucchini boats into the air fryer basket without stacking or overlapping. Air fry at 350 degrees F for 10-14 minutes cook time. Zucchini should be fork tender when done.
I make these Zucchini Boats in my Cosori 5.8 quart air fryer. Size and wattages vary, so cooking times may need to be adjusted by a couple of minutes.
Zucchini Boats Tips
- Use Fresh Zucchini: Use fresh, similar sized zucchini to make your pizza boats. I have found that medium-sized zucchinis for the perfect balance between size and tenderness. Larger zucchinis may have tougher skins and may not fit properly in the air fryer basket.
- Don't Scoop Too Much: When scooping out the center to create your well, be careful you don't scoop out too deeply because that can break the zucchini.
- Don’t Add Too Many Toppings: Avoid overfilling with toppings so they don't fall off during air frying.
- Serve Immediately: Eat your pizza boats right when they are done so the cheese doesn't harden and the sauce doesn't make the zucchini soggy.
Variations for Pizza Zucchini Boats
- Meat Lover’s: Add cooked sausage, ham, or crumbled bacon on top of the cheese.
- Vegetarian Pizza: Leave the meats off of your zucchini boat and top with your favorite pizza veggies like diced bell peppers, mushrooms, red onions, or black olives.
- Hawaiian Pizza: Top your pizza boat with chopped ham and pineapple for another classic pizza combination.

You don't have to at all! I will say that if you want your pizza boats to be a little softer, air fry them without the toppings first for a few minutes.

Yes! You can prep the zucchini boats by scooping out the center and prepping the toppings. Just keep everything stored in an airtight container and keep in the fridge overnight.
What’s the best way to store leftovers?
Store leftover zucchini pizza boats in an airtight container in the refrigerator for up to 3-4 days. Reheat them in the air fryer to get them crispy again. I also add a fresh sprinkle of shredded cheese when reheating leftovers.
