My entire family loves this easy recipe for lemon poppy seed muffins. You can take your favorite store brand of lemon pound cake, lemon pudding mix, and you have some of the best tasting lemony muffins. In fact, you don’t even need fresh lemons to get that lemony flavor with this recipe!

This is a delicious lemon poppy seed muffins recipe. In fact, it’s one of my family’s favorite muffin recipes.

Ingredients:

  • Lemon pound cake mix (I use Krusteaz Meyer Lemon pound cake, it comes with a glaze, too!)
  • Ingredients for the cake mix
  • Instant Lemon Pudding mix 
  • poppy seeds

How to Make Lemon Poppy Seed Muffins in the Air Fryer

  1. Take the cake mix and ingredients for the cake mix, instant pudding mix, and place them into a mixing bowl. Add the poppy seeds, and mix until combined.

  2. Spray the silicone cups and scoop the muffin batter into the silicone liners, filling them about halfway.

  3. Place the silicone cups into a single layer in the basket of the air fryer. 

  4. Use the air fry function and air fry at 320 degrees Fahrenheit for 12-15 minutes, or until the tops are golden brown and muffins are cooked through.

  5. Remove the lemon poppy seed muffins from the air fryer.

  6. Allow the muffins to cool on a wire rack before removing them from the liners and then top with glaze if desired before serving.

NOTE: This recipe was made using a 5.8qt Cosori Air Fryer. If you’re using a different brand of air fryer, you may need to adjust the cooking time slightly to work with your brand of air fryer.

TIPS:

  • For best results, fill the silicone cups only halfway.
  • This recipe makes 18 muffins.
  • Check on the muffins during the last couple of minutes in case you need to add cooking time or remove the muffins sooner.

How do I store leftover muffins?

Store remaining muffins in an airtight container in the refrigerator for up to a week. To reheat, allow them to sit at room temperature for 10 minutes and then warm in the microwave for 10 seconds.

Can I add a glaze to the muffins?

You can top these muffins with a simple optional glaze. Consider making a light glaze with powdered sugar, lemon extract, and milk for a sweet lemon glaze. Or use a little bit of maple syrup if you’re snacking on these for an amazing breakfast.

I use a box mix that comes with a lemon glaze packet included.

    Not sure what silicone cups are for baking

      They are like cupcake liners, but they are made of silicone. The paper liners would be flimsy, and the silicone keeps the shape.
