- Snap the ends off the fresh green beans, then place them into a colander to rinse. Place the green beans on a paper towel and pat dry.
- Coat the green beans in the all purpose flour.
- Whisk together the eggs in a small bowl.
- Mix together parmesan cheese, panko breadcrumbs, and garlic powder in a separate bowl.
- Dip the green beans into the egg mixture, and then dip the green beans into the panko and cheese mixture.
- Coat the green beans well. Add the green beans to a cooling rack as you work to finish the remainder of the green beans. Spray the coated beans with a light coating of olive oil.

I made these for dinner tonight and they were absolutely delicious! I am diabetic so I am always aware of the carb count in recipes. I made a few small changes to the recipe to adjust to my dietary needs. Instead of the flour, I used 1 tbsp of corn starch to initially coat the beans. Then, I reduced the amount of panko bread crumbs and increased the amount of parmesan cheese in the final coating. I also added a little black pepper to the crumb coating. I may reduce the cook time slightly next time as I tend to like my green beans a little crunchier. I will definitely make these again!
