These Zucchini fritters are easy and a huge hit at my house. So much so that they disappear as fast as I can make them. If you're looking for a delicious, crispy, low-carb snack, this is going to be a good one!
Zucchini Fritters are one of my favorite snacks to make. You only need 2-3 shredded zucchini and a handful of ingredients for a delicious snack or appetizer.

Easy Air Fryer Zucchini Fritters
You can top these fritters with sour cream, green onions, parmesan cheese, or other fresh herbs and spices to enhance the flavors of this dish.
I would probably call myself a bit of an air fryer addict. I love to make things in my air fryer. Some of my favorite side dish recipes are air fryer french fries, air fryer eggplant wedges, and air fryer tater tots.
Ingredients:
- 2-3 medium/large zucchini - the main ingredients to this dish and fresh produce is best.
- teaspoon salt - gives this dish a little added flavor and helps pull the water from the zucchini.
- large egg - helps to hold the fritters together while cooking.
- All purpose flour - another ingredient that helps hold the fritters together.
- garlic powder
- onion powder
- tsp smoked paprika
- ground black pepper
You can always opt for different seasonings that suit your taste buds, but I find this is the perfect blend of seasonings for my fritters.
I like to use a box grater to shred my zucchini but you can use a handheld cheese grater or something easy you like a food processor if you have that on hand.
How to Make Zucchini Fritters in the Air Fryer
Step 1
Take a grater and shred 2 or 3 medium zucchini.
Step 2
Add salt to the grated zucchini and mix. Let the mixture sit for 10 minutes and then drain out all the water and excess liquid out of the fresh zucchini with a strong paper towel or clean kitchen towel.
Step 3
Preheat air fryer to 360 degrees Fahrenheit. Prepare the air fryer basket with nonstick spray or parchment paper if needed.
Step 4
Whisk the egg.
Step 5
In a medium mixing bowl, add the whisked egg, flour, and spices to the shredded zucchini. Mix well.
Step 6
Use an ice cream scoop to scoop 2 tablespoon of the zucchini fritter batter and place into the bottom of the prepared air fryer basket. You should be able to make 5 fritters, leaving room in between each one.
Step 7
Spray the tops of each fritter with cooking spray for a crispier fritter. I prefer to use olive oil spray.
Step 8
Air fry the zucchini fritters for about 12 minutes, or until golden brown and crispy.
Step 9
Carefully remove and serve with your favorite dipping sauce.

NOTE: This recipe was made using a Cosori 5.8qt Air Fryer. If you are using a different brand of air fryer, you may need to play with the cook times by adding or taking away a minute or two.
I love making these fritters. They always come out with a perfectly crispy exterior and are full of yummy flavor.
Expert Tips
Grate the Zucchini Properly: Use a box grater or a food processor to grate the zucchini finely. After grating, squeeze out as much excess moisture as possible from the grated zucchini using a clean kitchen towel or cheesecloth. Excess moisture can lead to soggy fritters.
Season Generously: Zucchini itself is quite mild in flavor, so don't skimp on the seasoning. Add salt, pepper, garlic powder, onion powder, and any other herbs or spices you prefer to the grated zucchini mixture. This ensures your fritters are flavorful throughout.
Incorporate Binding Agents: To help the fritters hold their shape and maintain their crispiness, add binding agents like beaten eggs and breadcrumbs or flour to the grated zucchini mixture. These ingredients will help bind everything together during cooking.
Storage and Reheating
Store crispy zucchini fritters in an airtight container in the refrigerator for up to 2 days.
Reheat the fritters in the air fryer at 360 degrees Fahrenheit for 1-2 minutes or until heated through.
Note that leftover crispy air fryer fritters won't be near as crispy or good as fresh zucchini fritters straight from the air fryer.
FAQs
Absolutely! While I used a Cosori basket type Air Fryer for this recipe, you may be using different air fryer brands which can cook differently. I have found that 12 minutes of cooking time is the perfect amount of time to use when cooking these zucchini fritters with my Cosori.
No one wants their zucchini fritters soggy, so make sure you are also squeezing out as much of the liquid from zucchini as possible with a strong paper towel or cheese cloth.
The honest answer is that's up to you. The skin of the zucchini has extra vitamins and nutrients and also gives the fritters a bit of added color. I typically will skin one of the zucchini and leave the other with the skin on.
If you are looking to substitute the all purpose flour, you can also use different variations such as almond flour or chickpea flour.
You can serve fritters with all of your favorite sides and dipping sauces. I love to serve these with sour cream and a little hot sauce or Tzatziki sauce. You can also consider topping these with parmesan cheese, feta cheese, or blue cheese.

Far too salty. Next time I will rinse the zucchini before squeezing. Otherwise very nice

Tasty, but messy and only browned on one side. The uncooked fritters oozed down through the holes in the air fryer basket during cooking and got stuck. Some I could dislodge, on others the browned bottom bit stayed stuck to/wedged into the holes. Also, the top didn't brown at all. It was cooked and it was tasty, but it was an anemic pale color. I also didn't use the full tablespoon of salt. I love salt - to the point that other people try my food and make a face - but a tablespoon does seem way over the top. 1/2 teaspoon did the trick just fine for getting all the moisture out and tasted yum as well!

Good recipe. Used modest salt to pull moisture from zucchini. I am thinking I'll add some finely chopped bell pepper next time.
