Air fryer recipes without meat are some of my favorites to make. This is because once the summer heat arrives, you know that there are going to be great options for delicious ripe and ready veggies, perfect for a weeknight dinner.
If you're looking for healthy recipes that only take about 10-15 minutes to make, add these veggie kebabs to your air fryer cooking radar.
Not only are they easy to season, but they truly do make delicious meals. Forget about grilling season this year - and let your air fryer be the star of the show. The whole family will enjoy the flavor of this easy dinner because it's fast and delicious, and veggie skewers are fun to eat, too!

Ingredients
- Zucchini
- Red bell pepper
- Orange bell pepper
- Purple onion
- Yellow squash
How to Make Air Fryer Vegetable Kabobs
- Cut wooden skewers to fit into the air fryer if needed.
- Soak the skewers in water for 20 minutes before air frying.
- Slice the zucchini and squash into ½ inch rounds.
- Slice the bell peppers and onion into 2-inch squares.
- Take the skewers and rotate the vegetables as desired. Repeat until each skewer is made.
- Place the vegetable kabobs into the air fryer basket in a single layer.
- Air fry the vegetable kabobs at 350 degrees Fahrenheit for 14 minutes, turning the kabobs halfway through the cooking time.
- Serve immediately.
Variations
Change the ingredients - Since the cooking process is so simple, this means that you have flexibility in the ingredients that you can add. This is one of the best things about this recipe! You can add more red onion, cherry tomatoes, white onion, mushroom, and more!
Add meat - Even though you might not want to add meat to all the vegetable kebabs, you can add it to some of them! A vegetable kabab can easily turn into delicious chicken kabobs just by adding a little bit of cubed chicken breast.
You'll want to make sure that you're cooking the chicken on the chicken kebabs all the way, but the outcome will be delicious. (be sure to use a meat thermometer to test that the internal temperature of the chicken is at least 165 degrees)

However, some of the best options for sauce are BBQ sauce or even a bit of cajun seasoning sprinkled on top.
How to Store
Once the air fryer kabobs are cooled down, just pull off the veggies and store them in an airtight container in the refrigerator. This makes them easy to reheat and enjoy the next day.

How do I get all my veggies to cook at the same rate?
You need to be sure to cut the vegetables so that they're similar sizes. This will ensure that they'll cook the same to have the same texture.
If you make some bigger and some smaller, then the smaller pieces are going to cook must faster than the bigger pieces.
How many kabobs should I cook to feed a family?
For a family of 2-3 people, plan on making 3-4 kababs. This gives everyone one to eat and enjoy and then have a little bit remaining to share.
