This Air Fryer Pizza Quesadilla recipe is the best way to use flour tortillas! Simple ingredients loaded with flavor make this easy recipe a hit repeatedly. This is one of my go-to recipes for busy weeknights because you can’t beat the crispy crust paired with the melty cheese and toppings. I also love whipping this up for a quick lunch on the weekends or even an after-school snack.

This is one of those air fryer recipes that the kids will ask for all the time!

Ingredients

  • flour tortillas 
  • shredded mozzarella cheese 
  • pepperoni 
  • pizza sauce 
  • Italian seasoning 
  • butter (unsalted) 
  • Parmesan cheese

How to make Air Fryer Pizza Quesadilla 

  1. Remove the tortillas from the packaging and brush one side of each tortilla with melted butter.

  2. Place each tortilla in the air fryer basket, brushed side down. 3. Spread a thin layer of pizza sauce, pepperoni slices, shredded cheese, and Italian seasoning on top of the tortilla.

  3. Fold each tortilla in half and gently press together or seal them with a toothpick.

  4. Air fry at 350 degrees F for 8-10 minutes, flipping the tortilla halfway through cooking time until you have a crispy tortilla that is golden brown.

  5. After two minutes of air frying, open the basket and gently press them together if the tortillas have opened. The melted cheese will now keep them sealed.

  6. Remove tortillas and brush again with a light coat of butter, then sprinkle with parmesan cheese before serving

I make this recipe in my Cosori 5.8 qt. air fryer or 6.8 quart air fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.

Variations

Use gluten-free tortillas – If you need to cut out gluten, do so! You can also use low carb tortillas for this air fryer tortilla pizza recipe.

Add a variety of meats – Nothing says a supreme pizza quesadilla like meat! Pile high the meat, add some black beans, cut up some bell peppers, place a few black olives, and you’re in for a treat.

Add fresh herbs – Fresh basil on top is a great flavor enhancer!

How to serve

You know this is an easy meal when you have to eat as is or add toppings to the top of the crispy tortillas. I like to change it up and sometimes add some sour cream on top of mine, too!

How to store

An easy way to store leftovers is to let them cool after cooking and then place quesadillas in an airtight container to save for later. Leftovers of this make for a quick dinner. You can also wrap leftovers in plastic wrap and store them in the fridge as well.

FAQs

What is the best cheese to add to this pizza recipe?

All cheese melts, but they don’t all have the same flavor! I love adding Mexican cheese but don’t forget that the most classic cheese to add is mozzarella. You can place whatever type of cheese on top of the tortilla and let the whole family pick and choose their own cheese toppings.

Can I use corn tortillas for this recipe?

For this perfect pizza quesadilla, a flour tortilla works best. This is because it crisps up and holds its own quite well, without the worry of becoming soggy or breaking during the cooking process.

Can I reheat leftovers in the air fryer?

Of course! This is the best way to get that flour tortilla back to crispy perfection! You may need to add more cheese, too!
