This is great because you can make them super-fast, and you only need two ingredients. So, in less than 15 minutes this delicious pineapple appetizer will be ready to eat.

BACON WRAPPED PINEAPPLE IN AIR FRYER

You will love this recipe because these have a fantastic flavor and are family friendly. The irresistible bacon makes them a fun dish for breakfast on a busy school day or brunch with friends.

This is a wonderful dish to take to a dinner with friends or serve as appetizers for parties in your own home. Guests at parties, whether it’s a birthday, retirement or holiday party, will all enjoy these yummy pineapple in bacon bites.      

Ingredients:

  • pineapple chunks
  • bacon– flavored bacon like Farmland’s Hickory or Applewood, add extra flavor to the bites.

Optional Additional Flavors: Black pepper, pinch of cayenne pepper or a squeeze of lemon juice.

Directions:

  1. Open the canned pineapple chunks and drain juice in colander. Remove 24 chunks for this dish. Cover and store remaining pineapple for later use.

  2. Gently pat the chunks dry with paper towels to remove excess liquid.

  3. Lay bacon flat on the cutting board and use a sharp knife to cut bacon in thirds.

  4. Wrap each pineapple piece with a piece of bacon, secure the ends together with a toothpick.

  5. Place each completed piece on a baking sheet or cutting board, until all pineapple chunks are wrapped.

  6. Transfer bites to the air fryer basket, in a single layer without stacking or overlapping.

  7. Air fry at 400 degrees F for 8-12 minutes, until bacon strips reach your desired crispness. Toss bites halfway through air frying.

I make this recipe in my Cosori 5.8 qt. air fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.

What can I serve with this dish?

This dish can be served with different sauces that are sweet or spicy. They make delicious starters before main entrees such as, air fryer Cajun shrimp, a tangy sesame chicken or cheesy stuffed peppers. Some favorites to serve alongside these crispy bacon bites are a grilled artichoke, blooming onion or warm garlic knots.

Are there other types of meat I can use?

Yes, there are other types of meats you can use to make this recipe. You can use a thick slab bacon, which is cut to order by your local butcher, turkey bacon, strips of pancetta or pieces of prosciutto that can be wrapped around the pineapple. You can also use a different flavor of bacon for extra flavor.

How to store leftovers?

Allow bacon to cool and stay crispy prior to storing. Store in an airtight container or resealable storage bag in your refrigerator for up to 4 days. They can be stored in a freezer storage bag or airtight container in your freezer for up to 3 months.

Optional Brown Sugar Glaze:

  • 2 tablespoons melted butter
  • 2 tablespoons brown sugar

Instructions

  • In a small bowl, stir together the melted butter and brown sugar. Brush over bacon wrapped pieces to coat, before air frying.

Notes

Optional Favorite Dipping Sauces: Barbecue sauce, honey mustard sauce, teriyaki sauce, ginger lemon sauce, ranch dressing or a brown sugar sauce.
Substitutions: Fresh pineapple is an alternative to use to make this dish.
Kitchen Tips: Use kitchen shears or kitchen scissors to cut bacon slices. Place a piece of parchment paper in basket of air fryer to ensure bacon does not stick.
