This recipe is actually inspired by my Air Fryer tortilla pizza, which was such a hit with everyone in my family.

Recipe Ingredients

  • High-protein tortilla: For that easy, crispy crust. Using a high protein tortilla is great, but you can also use your regular flour tortilla if you want to.
  • Eggs: The protein powerhouse and a breakfast classic.
  • Toppings: I used a mix of fresh spinach, some crumbled Air Fryer bacon and lean deli ham. Sometimes, I dice up some of the leftover ham whenever I make my Air Fryer ham.
  • Cheese: Some low-fat cottage cheese for that extra protein and rich and creamy texture when blended into the eggs, and reduced fat mozzarella and cheddar, for that cheesy, melty pull and nice, sharp flavor.
  • Seasonings: Just some salt and black pepper. You can try using homemade poultry seasoning too, if you want to.

Variations

  • You can swap the bacon and ham for some Air Fryer turkey bacon and crumbled chicken sausage if you want to.
  • For a veggie version, add mushrooms and peppers. I love using my leftover Air Fryer mushrooms for my breakfast recipes. In fact, sometimes I also add them to my Air Fryer scrambled eggs.
  • To make a spicy high protein breakfast pizza, throw in some diced jalapenos and red pepper flakes and drizzle some hot sauce over the pizza before serving.
  • Sprinkle some everything bagel seasoning over the pizza right before serving to amp up the flavors.

How to Make High Protein Air Fryer Breakfast Pizza

  1. In a blender, combine eggs and cottage cheese until completely smooth.
  1. Stir half of the mozzarella cheese into the egg mixture.
  1. Place a round silicone liner into the air fryer basket. Lay the tortilla inside the liner, gently pressing it slightly up the sides to form a crust.
  1. Spread the spinach evenly over the tortilla.
  1. Pour in the egg mixture over the spinach.
  1. Top with the chopped ham and sprinkle the remaining mozzarella, cheddar cheese and bacon.
  1. Air fry at 320 degrees F for 18 to 20 minutes, or until the center is set and the cheese is lightly golden.
  1. Allow the breakfast pizza to rest for about 5 minutes before slicing and serving.

Recipe Tips & Tricks

  • Blend the cottage cheese and eggs until completely smooth for the best texture.
  • A round silicone liner makes transferring the pizza much easier- I realized this when I made my Air Fryer omelette. Parchment paper liners can be tricky to work with for this breakfast pizza.
  • Let the pizza rest for 5 minutes before slicing so the filling can set.
  • If the cheese browns too quickly, loosely cover the pizza with foil during the last few minutes of cooking.
  • You can also add some crumbled Air Fryer sausage patties or Air Fryer peppers and onions to bulk up the breakfast pizza.

Ingredients 

  • 1 high-protein tortilla, or your favorite tortilla
  • 1 cup fresh spinach
  • 5 eggs
  • ¾ cup low-fat cottage cheese
