Recipe Ingredients

  • Shredded chicken: To form the hearty base of the filling. Rotisserie chicken works especially well, but sometimes, I also end up shredding some of my leftover Air Fryer chicken bites and using it for the recipe.
  • Cheese: I used a mix of blended cottage cheese which has a nice creamy texture and some mozzarella to add that melty, cheesy goodness to the filling.
  • Seasoning: I kept it simple and just used some garlic and herb seasoning. Feel free to experiment and try other seasonings like some homemade ranch seasoning.
  • Tortillas: Soft flour tortillas are perfect as they hold the filling and crisp up beautifully while cooking.
  • Butter: To brush over the tortillas and get them golden brown and crispy in the Air Fryer.

  • Swap the mozzarella for cheddar, Monterey Jack, Pepper Jack, or your favorite shredded cheese blend.
  • If you don’t have cottage cheese, softened cream cheese can be used for a richer filling.
  • Rotisserie chicken works wonderfully in this recipe, but leftover turkey or even shredded pork can be substituted. In fact, you can also try using Air Fryer ground beef as the filling.
  • For a spicy version, add diced jalapeños, hot sauce, or a pinch of crushed red pepper flakes to the filling before rolling. Sometimes, I like to use my homemade taco seasoning before rolling.
  • You can also add chopped green onions, spinach, or cooked bacon to create different flavor combinations.

How to Make Air Fryer Chicken and Cheese Roll Ups

  1. In a mixing bowl, combine the shredded chicken, blended cottage cheese, mozzarella cheese, and 1½ teaspoons garlic and herb seasoning.
  1. Stir until all of the ingredients are evenly combined.
  1. Lay the tortillas flat on a clean work surface. Scoop some of the chicken mixture onto each tortilla.
  1. Roll each tortilla tightly and place seam-side down.
  1. Brush the tops of the roll ups with the seasoned butter mixture. Place the roll ups seam-side down in the Air Fryer basket.
  1. Air fry at 350 degrees F for 10 minutes, flipping halfway through cooking, until golden brown and crispy.

Recipe Tips & Tricks

  • Blend the cottage cheese until smooth to get the creamiest filling. It barely takes a couple of minutes, but makes all the difference.
  • Avoid overfilling the tortillas to prevent them from opening while cooking. I realized this the hard way when I made my Air Fryer apple pie taquitos.
  • Place the roll ups seam-side down to help them stay closed.

Ingredients 

  • 2 cups shredded chicken
  • 12 flour tortillas
  • 6 oz cottage cheese, blended
  • 4 tbsp mozzarella, shredded
  • 2 tbsp butter
  • 2 tbsp garlic and herb seasoning

Instructions 

  • In a medium bowl, add shredded chicken, cream cheese, 1 1/2 Tbsp seasoning, and mozzarella. Stir together.
  • Lay out the tortillas, scoop 1/4 cup into each tortilla.
  • Add 1/2 Tbsp seasoning and melted butter to a bowl.
  • Add the tortillas seam side down, brush with butter and seasoning.
  • Air fry at 350F for 10 minutes, flipping about halfway through.
