This Air Fryer chicken and vegetables recipe is the perfect quick and healthy meal that doesn’t skimp on flavor.

Packed with colorful bell peppers, zucchini, and tender chicken, it’s a complete meal that cooks in just 15 minutes. Pair them with my Air Fryer fried rice to make it more filling and wholesome.

On rushed weekdays, I usually turn to my Air Fryer chicken Fajitas or Air Fryer chicken kabobs. They come together in under 20 minutes, and everything comes together in the Air Fryer, which means less mess to cleanup afterwards.

This recipe is a simplified, versatile version of these- with both the chicken and veggies getting cooked together at the same time.

Recipe Ingredients

  • Chicken: I used boneless chicken breast here, which is an excellent lean protein that cooks wonderfully in the Air Fryer. Use leftovers to prep for my Air Fryer orange chicken recipe.
  • Veggies: I used a mix of zucchini, red and green bell peppers and onions. You can use other veggies of your choice.
  • Olive oil: To coat the chicken and veggies and give them that slight golden brown caramelization on the outside.
  • Seasonings: Just some ground black pepper and garlic powder to keep it subtle. Sometimes, I like to add a bit of my homemade poultry seasoning too.

Variations

  • Bulk up the dish by adding more diced veggies like carrots, broccoli, baby Bella mushrooms or even baby corn.
  • Play around with the seasonings and spices to amplify the flavor of the chicken and vegetables. I like alternating between my homemade taco seasoning and BBQ spice mix, depending on my mood.
  • You can also use boneless chicken thighs instead of chicken breast if that’s what you have at hand.

How to Make Air Fryer Chicken and Vegetables

Start by preheating the Air Fryer to 400°F (200°C) for 3 minutes. Chop the chicken breast into bite-sized pieces and add chopped vegetables to the same bowl.

  1. Season and pour olive oil over the chicken and vegetables.
  1. Mix well to ensure they’re all nicely coated.
  1. Transfer them to the Air Fryer basket in a single layer, and air fry at 400 F for 7 minutes.
  1. Toss the vegetables once and air fry again for another 7-8 minutes.

Serving Ideas & Suggestions

You can enjoy these Air Fryer chicken and vegetables on their own as a low carb dinner – just like my Air Fryer zucchini pizza boats.

If you want to make it more filling, you can serve it along with some rice or quinoa- or even my Air Fryer spaghetti squash. If you have some leftovers, you can use it as a stuffing for your sandwiches and wraps, along with some cheese and sauces of your choice. Pair them with some Air Fryer sweet potato fries or my favorite Air Fryer green bean fries for a nice side to munch on.

Recipe Tips & Tricks

  • Chop the chicken into even sized chunks to ensure they are all perfectly cooked at the same time.
  • To minimize cleanup, you can also line your Air Fryer basket with parchment paper before you layer the veggies and chicken. I did this when I made my Air Fryer chicken Parmesan meatballs.
  • Finish up with a drizzle of freshly squeezed lemon juice right before you serve. This can really amp up the flavors of the chicken and veggies.
  • Don’t overcrowd the Air Fryer basket, and make sure you leave enough room for some hot air to circulate through the basket. I realized this the first time I made my Air Fryer Parmesan crusted chicken, and ended up stuffing the basket.
  • To prep this ahead of time, you can chop the chicken and veggies and refrigerate them in separate containers for up to a day, and then season and air fry them when you want to.
  • Sometimes, I like to add potatoes to this mix too. If you want to, just remember to air fry them for 10 minutes first, and then team them up with the chicken and veggies to ensure they’re fully cooked and tender.

Ingredients 

  • 1 lb chicken breast (cut into bite sized pieces)
  • 1 medium red bell pepper (cut into pieces)
  • 1 medium green bell pepper (cut into pieces)
  • 1 medium zucchini (cut into pieces)
  • 2 Tablespoons olive oil
  • 1 Tablespoon garlic powder

Instructions 

  • Preheat the air fryer to 400 degrees Fahrenheit for 3 minutes.
