I’m all about these homemade air fryer chicken taquitos. Not only does it cure my craving for Mexican food, but it ups the flavor scale of traditional taquitos in a great way. This is one of those air fryer recipes that makes a simple weeknight meal or perfect for a party appetizer as well.

Ingredients:

  • Rotisserie chicken (2 cups shredded) 
  • Cream cheese (softened) 
  • Mexican cheese (shredded) 
  • Taco seasoning 
  • Corn tortillas 
  • Avocado oil (spray) (*Can also use olive oil) 
  • Salsa, guacamole, and queso for serving

How to make Crispy Air Fryer Chicken Taquitos

  1. In a large bowl, combine the shredded chicken, cream cheese, and taco seasoning. Mix well.

  2. Fold in the Mexican cheese until just blended.

  3. Warm the tortillas in the microwave for about 30 seconds, or heat them on a skillet over low to medium heat on the stovetop.

  4. Scoop 2 Tablespoons of the chicken and cheese mixture onto a corn tortilla. Wrap the tortilla, and repeat until all taquitos have been made.

  5. Add the taquitos into the air fryer basket in a single layer. Spray the tops of the taquitos with the avocado oil spray.

  6. Air fry the chicken taquitos at 400 degrees Fahrenheit for 5 minutes, flip and spray with oil, and air fry for an additional 2-3 minutes or until desired crispiness has been reached.

  7. Serve with salsa, guacamole, sour cream, and queso.

Variations 

Change the type of cheese – You can use any type of cheese for these rolled taquitos. Cheddar cheese, or even a shredded Mexican cheese blend would all be perfectly fine. An easy air fryer recipe like this one is versatile. 

Use leftover chicken – Homemade taquitos are a breeze when you can use leftover juicy chicken. You can also cook up your own chicken breasts and add that to this dinner recipe, too. 

Use beef – This recipe can easily be turned into beef taquitos. You add whatever meat you want to cook taquitos your favorite way.

How to serve 

Once the crispy chicken taquitos are cooked, your favorite toppings made great additions. Serve on a plate and enjoy. 

How to store 

Do you have leftover taquitos? You’re lucky! Just store them in an airtight container and then reheat the remaining taquitos the next day. You can store them for up to 3 days.

FAQs

Are taquitos better in an air fryer or oven?

For this chicken recipe, the air fryer is the best! To get that crunchy outer shell with a tender and delicious middle, you have to use the air fryer! 

Why are my taquitos not crispy?

One of the most helpful tips to get crispy taquitos is to make sure that you cook them long enough and that you don’t overcrowd the air fryer basket. The only way to get them crispy is to give them space and heat. 

Can I use flour tortillas? 

You can, but you won’t get that crispy texture like you will using corn tortillas. Either method works well for this main meal, but corn tortillas tend to work the best!
