HOW TO MAKE HOMEMADE PANCAKE SYRUP
STEP 1
Add water, granulated sugar, and brown sugar to a medium sized saucepan.
STEP 2
Place the saucepan over medium heat and stir continuously until the sugars are completely dissolved.
STEP 3
Once the sugars have dissolved, continue stirring until it begins to lightly boil. Turn the heat to low, and let the syrup mixture simmer for 3-5 minutes, while stirring.
STEP 4
Remove the saucepan from heat, and then add in the maple extract and stir it into the syrup. Let the syrup cool before storing or using.
TIPS
Be sure you let the syrup cool before you store it or use it. It will be VERY hot after simmering for five minutes.
For a thicker syrup, add in a tablespoon of white sugar at a time until it reaches your desired consistency.

VARIATIONS
There are so many fun flavors of extracts you can use! Fun flavors like caramel, orange, chocolate, almond, or hazelnut, are just a few. Try making a few flavors for a fun pancake brunch.
For fruit syrups, add a puree of your favorite fruit after the sugars have dissolved.
STORING AND REHEATING
After the syrup has cooled, transfer to a dry and airtight container. I use a mason jar for storage. Keep it in the fridge, and it should last for a few months.
If you want to heat it up before using it, just stick it in the microwave, in a microwave safe container, and heat it for 30 to 60 seconds.
FREQUENTLY ASKED QUESTIONS
Anything else that you might like a drizzle of syrup on such as ice cream, granola, yogurt, or even a spoonful mixed in with your oatmeal.
It will not be as thick when it is hot, but as it cools it will thicken. If you want it thicker, you can add an extra tablespoon or two of sugar while it is on the stove, so the sugar can dissolve.
