Ingredients:

Ingredients needed to make stuffed chicken measured on a marble table.
  • Boneless skinless chicken breasts
  • Cream cheese
  • Basil pesto sauce
  • Olive oil
  • Garlic powder
  • Salt and ground black pepper
  • Parsley flakes

Directions:

  1. To make stuffed chicken begin by using a sharp knife to butterfly each chicken breast in half without cutting all the way through.

  2. Lay each chicken breast between two pieces of plastic wrap, or in an unsealed gallon Ziploc freezer bag. Use a meat mallet and pound chicken until it is evenly flattened, about ¼ inch thick.

  3. Next, remove from the wrap or bag used to flatten, and lay each piece flat on the cutting board, set aside.

  4. In a medium bowl, stir together the cream cheese and basil pesto sauce, until well combined. 

    Cream cheese, basil pesto, sun dried tomatoes, and seasonings being mixed in a small clear glass bowl.

  5. Divide the mixture in half, and place in the middle of the chicken, then fold chicken ends over and seal with toothpicks, to keep ends of chicken closed while cooking.

  6. Place chicken breasts in a single layer, without overlapping into a lightly sprayed air fryer basket. Brush chicken with olive oil, and then sprinkle seasonings over the chicken.

  7. Air fry at 380 degrees F for 13-18 minutes until the chicken is cooked and golden brown, and an instant-read thermometer shows chicken has an internal temperature of 165 degrees F

VARIATIONS:

Add a different filling for different flavors – If you aren’t a fan of basil pesto, you can substitute the ¼ cup of basil pesto for another type of cheese, chopped meat, or chopped vegetables.

Add different cheese – You can easily take the flavor to the next level by adding parmesan cheese to the middle or tops of these air fryer stuffed chicken breasts. You could also use goat cheese, feta cheese, mozzarella cheese,  or your favorite slice of cheese, like cheddar cheese. 

Add different seasoning blend– Onion powder, cayenne pepper, paprika, red pepper flakes, or even chili powder are all delicious additions to consider. Just know that you can quickly turn the rich filling spicy, so be careful!

Add veggies – You can even pop in some fresh spinach, chopped bell peppers or tomato slices, for the kids as well! The best part is that they won’t even mind or notice!

Can I eat this on the keto diet? 

Due to the basic ingredients of this simple chicken roll, you can rest easy knowing that it’s low carb. This is one of those air fryer recipes that everyone can enjoy, without feeling guilty or stressed out by what they are eating. 

How do I know if boneless skinless chicken breasts are cooked all the way? 

For the most accurate results, you will want to use a meat thermometer and test the thickest part of the chicken. The best way to do this is just to insert it, and then check the reading on the screen. The internal temperature of the chicken should be 165 degrees F.

How do I store leftovers? 

Let the cooked chicken cool down to room temperature, and then store the leftovers in an airtight container. Keep it in the fridge and eat it within 3 days for the best results. You can reheat in the air fryer, oven, or microwave.

I make this recipe in my Cosori Air Fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 mins. With prep time, your total time for this meal should be under 30 minutes.
