What are Latkes
Latkes are traditional potato pancakes that are commonly associated with Jewish cuisine, particularly during Hanukkah, although they are enjoyed year-round as well.
They are made from grated potatoes mixed with ingredients such as eggs, onions, flour or matzo meal, and seasonings. The mixture is then fried until crispy, resulting in a delicious and savory dish.
Latkes are typically served with sour cream or applesauce as toppings.
They hold significant cultural and culinary importance in Jewish tradition, particularly during the Hanukkah holiday, where they symbolize the oil that miraculously lasted for eight days in the story of the Hanukkah miracle.

Ingredients Needed:
- Russet Potatoes
- Egg
- All purpose flour
- Kosher salt
- Ground black pepper
- Green onions
- Olive oil (to spray the tops with before cooking)

How to Make Potato Latkes in the Air Fryer
Step 1
Shred the potatoes using the large holes of a box grater and set them aside.
Step 2
Add the shredded potatoes to a small bowl of water and then soak the potatoes in cold water for about 30 minutes to remove the potato starch.
Step 3
Drain the potatoes and then use a cheesecloth, clean kitchen towel, or strong paper towels to squeeze out and remove the remaining excess water.
Step 4
In a large bowl add the grated potatoes, egg, flour, chopped green onion, salt, and black pepper. Mix well.
Step 5
Prepare the air fryer basket with nonstick cooking spray, olive oil, or avocado oil spray.
Step 6
Use a cookie scoop (or about 2 Tbsp) of latke mixture and scoop into a single layer onto the prepared air fryer basket. Spray the tops of the latkes with olive oil spray.
Step 7
Air Fry Potato Latkes at 350 degrees Fahrenheit for 10-12 minutes, or until the tops are golden brown.
Step 8
Allow the latkes to cool for a minute before carefully removing them from the basket of the air fryer and then serve with your favorite dipping sauces.
Storage and Reheating
Store any remaining latkes in an airtight container in the refrigerator for 2-3 days.
Reheat latkes in the air fryer at 350 degrees Fahrenheit for 2-3 minutes, or until heated through.
