Why Use Ripe Bananas for Muffins?
My favorite banana muffins are made with ripe bananas which gives the muffins a sweeter flavor than using fresh bananas. The riper the fruit, the more fructose, sucrose, and glucose are increased, which makes the fruit sweeter.

How to Make Banana Muffins in the Air Fryer
- Add the flour and baking powder to a large bowl and set aside. In a medium sized mixing bowl, cream together the white sugar, brown sugar, and butter with a hand mixer. Add the egg and the vanilla extract to the butter mixture. Pour the butter and sugar mixture into the flour mixture and mix until combined, and fold in the mashed bananas. Scoop the batter into the silicone baking molds. Fill each mold 3/4 of the way full. Place into the air fryer basket.
- Use the bake function and air fry the muffins at 350°F (177°C) for 8-10 minutes. Check at the 8-minute mark with a toothpick in the center of the muffins to ensure they are completely done. If it comes out clean, they are done! Carefully remove the muffins from the air fryer and allow them to cool on a wire rack before removing the muffins from the silicone liners.
NOTE: This banana muffin recipe was made using a 5.8 Quart Cosori Air Fryer. If you’re using a different brand of air fryer you may need to adjust the cook time. All air fryers cook a little differently and it’s always a good idea to test the recipe before making it.
Tips for Banana Muffins in the Air Fryer
- Use ripe bananas: The key to flavorful banana muffins is using ripe bananas. Look for bananas that are fully yellow with brown speckles or even slightly brown. The riper the bananas, the sweeter and more flavorful your muffins will be.
- Don’t overmix the batter: Overmixing can lead to dense muffins. Mix the wet and dry ingredients until just combined. It’s okay if there are a few lumps in the batter. Overmixing can also lead to the gluten developing too much, resulting in a tougher texture.
- Add mix-ins for extra flavor: While banana muffins are delicious on their own, you can enhance their flavor by adding mix-ins such as chocolate chips, chopped nuts (like walnuts or pecans), or dried fruit (such as raisins or cranberries). These additions not only add texture but also complement the sweetness of the bananas.
- Use the right flour: For a tender crumb, use all-purpose flour or a combination of all-purpose flour and whole wheat flour. Air Fryer Banana Muffins

- 1 1/2 cups all purpose flour
- 1/2 cup granulated white sugar
- 1/3 cup light brown sugar
- 1 teaspoon baking powder
- 2 bananas, ripe, mashed
- 1/2 teaspoon vanilla extract
- 1 egg
- 1/3 cup salted butter, melted
Instructions
- Add the flour and baking powder to a large bowl and set aside.
- In a medium sized mixing bowl, cream together the white sugar, brown sugar, and butter with a hand mixer.
- Add the egg and the vanilla extract to the butter mixture.
- Pour the butter and sugar mixture into the flour mixture and mix until combined.
- Fold the mashed bananas into the muffin batter.
- Use a large cookie scoop or ice cream scoop to scoop the batter into the silicone baking molds. Fill each mold ¾ of the way full.
- Place the silicone molds into the basket of the air fryer and bake at 350 degrees Fahrenheit with the bake function for 10 minutes.
- Carefully remove the silicone molds from the basket and place them on a cooling rack.

Just made these today,,, It took about 15 minutes to bake,, using the same fryer you said you have. I did put 2 bananas in but they were large, They came out good though, very tasty.
I am glad these turned out well for you! The only suggestion I could think of is “were they ripe, and did you mash them well?” Either way, I am glad they worked out for you! Also, sometimes altitude comes into play when you are baking. I am at sea level, so if you’re at a higher altitude, that could be a little issue as well. Usually, a higher altitude can take a little less time when baking.

Can you use the foil cupcake liners or would they collapse? They look delicious!
I have only ever used the silicone liners and never used the foil liners so I am not sure. I would think if you were able to double or triple them they would stay sturdy enough for you to fill them halfway or so without collapsing.
