These air fryer thumbprint cookies are a simple delicious bite of goodness. They have a crispy texture on the outside with a light, buttery inside that will melt in your mouth.

Ingredients:
- butter-softened
- brown sugar
- egg yolk
- vanilla
- all-purpose flour
- strawberry or seedless raspberry jam-like Smucker's
How to make Thumbprint Cookies:

In a large bowl, using a hand mixer on medium speed beat together the sugar, butter, egg and vanilla until completely combined.

Next, mix flour slowly into bowl, a ¼ cup at a time and beat on medium speed until a soft dough forms. Use a spatula to scrape sides making sure all flour has been mixed into dough.

Use a small portion or cookie scoop, or spoon to scoop dough, then roll dough into 1-1 ½ -inch balls.

Line your air fryer basket with parchment paper, and place balls of dough into prepared basket.

Using your thumb and gently press into top of dough, making a small dip in the center of each cookie. Allow a little room between each dough ball to spread.

Air fry at 320 degrees for about 7 minutes, until golden brown.

Allow the cookies to rest until they are cool enough to lift from the basket. Once cookies are cool enough, remove them from air fryer and place on a wire baking rack to finish cooling.

When cookies have completely cooled fill in the dip on the top of the cookie with a teaspoon of jam.
I make this dish in my Cosori 5.8 qt. air fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.
For a fancier presentation, top with powdered sugar or a drizzle of melted chocolate or frosting glaze. You can also sprinkle with chopped pretzel for extra crunch and a touch of salt or toasted coconut.

If you are going to freeze any extras or have made a double batch, you can place them in a freezer storage bag or airtight container. They can remain in freezer for 2-3 months.
Yes! Because these are simple cookies, they can easily be changed to a gluten free recipe. Almond flour and coconut flour can both be used to replace all-purpose flour. If you are using almond flour, it is a 1:1 ratio with all-purpose flour. Keep in mind, almond flour will make the cookies a bit crunchier. Coconut flour will make a bit sweeter cookie. That will also give them a lighter and more airy texture. Coconut flour is 1:¼ cup ratio.
