Air Fryer Snowball Cookies are buttery, soft shortbread cookies with a nutty flavor that melt in your mouth. If you or anyone in your family is a cookie lover than these warm cookies will be a huge hit.

They are an incredibly easy cookie to make with just a handful of ingredients. In less than 20 minutes you will be enjoying this classic holiday cookie.

SNOWBALL COOKIES IN AIR FRYER

You will love this delicious cookie recipe because who doesn’t love bite-sized cookies. This is a great recipe to have because they can be made quickly, and they will be devoured very quickly.

It is a favorite holiday cookie recipe I make to go on a cookie platter to take to my monthly book club or game day event. It is the perfect cookie to include with a holiday cookie exchange at work, church or with neighbors.

Ingredients:

Ingredients needed to make snowball cookies on a wooden table
  • unsalted butter, softened
  • powdered sugar
  • all-purpose flour
  • vanilla extract 
  • kosher salt
  • (Optional) pecans, finely chopped-like Fisher’s Nuts Pecans

Optional Additional Flavors: Add a 1/4 cup of shredded coconut, chopped candy cane, mini chocolate chips or dried cranberries. For a more nutty flavor cookie, replace vanilla extract with almond extract.

How To Make Snowball Cookies in Air Fryer:

  1. In a large bowl, beat together the butter and 3/4 cup of powdered sugar.

  2. Once combined, add flour, vanilla, and salt to the mixture. Continue mixing on low to medium speed for about a minute, until a soft dough is formed.

  3. With a rubber spatula add chopped pecans to the dough, until fully combined.

  4. Use a cookie scoop or spoon to measure batter, then roll dough into balls, about 1 ½ inch in size.

  5. Then place cookie dough balls into the air fryer basket, lined with parchment paper, leaving about an inch in between cookies.

  6. Air fry at 350 degrees F for 8-10 minutes, until golden brown. Gently remove from air fryer and place on cooling rack until done with the last batch.

  7. Once cookies have cooled, place them in a bowl, or large Ziploc bag with powdered sugar. Spoon or toss cookies with remaining 1 cup of powdered sugar coating, a few cookies at a time, until cookies are covered on both sides.

I make this recipe in my Cosori 5.8 qt. air fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.

FAQ’s

Are there other toppings I can put on these cookies?

These cookies have a buttery flavor and are delicious when topped with a drizzle of chocolate, caramel or butterscotch. Colored sprinkles or sugar also make them fun and super festive.

How to store leftover cookies?

Place them in an airtight dry container or resealable storage bag for up to 4 days at room temperature on your kitchen counter. If you plan on freezing the cookies place them in an air-tight storage container or zip-top freezer bag for up to 2 months.

How do I reheat frozen cookies?

If cookies have been frozen but previously cooked, remove the cookies from the airtight container. allow them to thaw out overnight and they will be ready to eat. If dough balls are frozen prior to being cooked remove them from the freezer directly air fry them for a couple of additional minutes than the original recipe states because they are frozen.

Notes

Cooking Tips: 
Be sure to let the cookies cool before coating them with powdered sugar. If they are still warm, they will easily crumble. 
This recipe makes about 2 dozen cookies using a 1 1/2-inch scoop so it will make multiple batches of cookies.
I have tried this recipe with gluten free flour and it works perfectly! Just substitute it 1:1 for all purpose flour. 
**If you have nut allergies, these cookies are just as amazing without the pecans.
