Ingredients for Chicken Cordon Bleu in the Air Fryer

  • Chicken breasts – Boneless, skinless, and evenly sized.
  • Cheese – Gruyère or Swiss for a classic flavor, or try cheddar or pepper jack.
  • Deli Black Forest ham – Adds a savory, slightly sweet balance, or use your favorite flavor of deli ham.
  • Egg – Helps the breadcrumbs and seasonings stick to the chicken. 
  • Kosher salt – Enhances the flavor of the chicken.
  • Black pepper – Adds a touch of heat. 
  • Italian seasoned breadcrumbs – Creates the crispy outer coating.

Variations

  • Use different meat: Swap ham for prosciutto, salami, turkey, or roast beef.
  • Use different cheeses: like blue cheese, brie, cream cheese, goat cheese, or mozzarella.

How to Cook Chicken Cordon Bleu in the Air Fryer

STEP 1 – Butterfly each chicken breast without cutting all the way through.

STEP 2 – Place the chicken between plastic wrap or in a Ziploc bag and pound it to ¼-inch thickness.

STEP 3 – Lay the chicken flat, then place a slice of cheese and ham in the middle, and fold the ends over. Secure with toothpicks.

STEP 4 – Whisk the egg in a shallow dish or bowl, with the breadcrumbs, salt, and pepper in a another shallow dish or bowl.

STEP 5 – Dip the chicken in the whisked egg, then coat with breadcrumbs mixed with salt and pepper.

STEP 6 – Lightly spray the air fryer basket and place the chicken in a single layer.

STEP 7 – Air fry at 380°F (193°C) for 13-18 minutes, until the chicken is golden brown and cooked through.

STEP 8 – Let the chicken rest for a minute, then top with a creamy Dijon sauce before serving. 

Note: I use a Cosori 5.8 qt. air fryer. Adjust cooking time by 1-2 minutes based on your air fryer model.

How to Make the Best Chicken Cordon Bleu in the Air Fryer

  • Flatten chicken breasts: try to make them the same thickness, so they will cook evenly.
  • Use an instant read thermometer: this is the best way to check the internal temperature (165 degrees F) to make sure it is properly cooked through. Overcooking can make the chicken tough too.

  • 1 cup of milk
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Creamy Dijon Sauce Directions

  1. In a small saucepan, add the milk and butter.
  2. Stir them over medium heat until melted butter and milk begin to lightly boil.
  3. Then stir in flour, parmesan cheese, Dijon mustard, salt & pepper.
  4. Turn heat down too medium low to low and continue to stir until sauce begins to thicken. Serve with chicken.

What are other flavor combinations I can use in this dish?

If you want to be creative, simply try different cheeses like, tangy blue cheese, brie, cream cheese, goat cheese or mozzarella. If you want to swap out the ham, you can use prosciutto, salami, or sliced turkey. 

How do I store leftover chicken?

If you have leftovers, let the chicken cool completely. Then, transfer to an airtight container or resealable storage bag, and keep in the refrigerator for 3-4 days. To reheat, just return to the air fryer at 380 degrees F, for a few minutes, until warm. 

What can I serve with this dish?

Ingredients 

  • 2 boneless skinless chicken breast, 6 ounces each
  • 4 slices swiss cheese
  • 4 slices black forest ham
  • 1 large egg, whisked
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup Italian Seasoned Breadcrumbs

Instructions 

  • To make Air Fryer Chicken Cordon Bleu, begin by using a sharp knife to butterfly each chicken breast in half without cutting all the way through.
  • Lay each chicken breast between two pieces of plastic wrap, or in an unsealed gallon Ziploc freezer bag. Use a meat mallet and pound chicken until they are evenly flattened, about ¼ inch in thickness.
  • Lay each piece flat on the cutting board, then place one or two slices swiss cheese and then top with a slice of ham, in the middle of the chicken and fold chicken ends over and seal with toothpicks, to keep ends of chicken closed while cooking. 
  • Place the whisked egg in a shallow dish or bowl. In a separate medium bowl or baking dish, that is shallow, combine the salt, pepper and breadcrumbs.
  • Roll the chicken in the egg mixture, and then dredge through the breadcrumb mixture, fully covering the outside of each piece of chicken.
  • Place chicken breasts in a single layer, without overlapping into a lightly sprayed air fryer basket.
  • Air fry at 380 degrees F for 13-18 minutes until the chicken is cooked and golden brown.

Notes

Optional Additional Seasonings: Spice this dish up and add some bold flavors like a pinch of cayenne pepper, red pepper flakes or a dash of siracha.
Optional Sauces: Sour cream, alfredo sauce, béchamel sauce or white wine sauce.
Substitutions: Use cornflake crumbs or cups of panko crumbs instead of seasoned breadcrumbs. Use a sheet of air fryer parchment paper if you do not have any non-stick cooking spray.

    The notes indicate that this serves FOUR but there are TWO chicken breasts. Are they to be cut in half?

      Hi Beth. I use two larger chicken breasts that are 6-8 ounces each. The serving number posted is based on the recommended serving size for chicken, which is 3-4 ounces.
