Air Fryer Brownie Mix Cookies are mini delicious brownies in the form of a cookie. Only four ingredients are needed to make these cookies with a soft fudge brownie texture. They are a perfect after school treat or dessert!

After making these Air Fryer Brownies using my favorite brownie recipe, I knew I would love these cookies. One of the best parts about these brownie mix cookies, is they check all of the boxes for brownie lovers.

I love cakey brownies, while my husband loves fudgy brownies. Somehow these cookies are both. You can cook them a minute less for your cookies to be more like gooey brownies too.

Because I love all things chocolate, instead of making a batch of brownies, I made these cookies. Brownie mix cookies are now a favorite recipe, because they are so easy to make from just a box of brownies. Chocolate brownie cookies are perfect if you need a dessert fast, or you just want a quick chocolate fix. 

What you need to make Chocolate Brownie Cookies in the Air Fryer

I make these cookies in my Cosori Air Fryer.  I use air fryer parchment paper and a portion scoop to make them the same size. If using a baking sheet, coat with cooking spray or line sheet with parchment paper.

Besides an air fryer, to make these cookies, the ingredients you need are:

  • box brownie mix, like Betty Crocker
  • eggs
  • vegetable oil 
  • all-purpose flour

How to make Air Fryer Brownie Mix Cookies 

In a medium bowl, add the box of brownie mix. Pour in the eggs, oil and flour. Stir the ingredients together until the brownie mixture becomes a thick fudgy batter.

Use a portion scoop or a spoon to scoop the batter from the mixing bowl, and place in the prepared baking pan, or into the air fryer basket lined with parchment paper.  Leave about 1 inch between the cookie dough to allow room for them to spread as they cook.

Air Fry at 370 degrees Fahrenheit for 6 to 8 minutes. Let the cookies cool to set for 2-3 minutes before transferring the baked brownie cookies to a plate.

FAQ’s

How do I keep them soft and fresh?

These yummy cookies will stay soft if they are sealed in an air-tight container or Ziploc bag. They are usually best if eaten fresh, within the first 3-5 days. 

Can I use variety flavors of brownie mixes?

Yes. You can use your favorite brownie mix. I personally love making these with my favorite traditional brownies mix for a chocolatey brownie flavor. If you prefer chewy, and ultra-rich brownies, you can use a fudgy brownie mix, or a mix with chocolate chips already mixed in.

What if my cookies don’t seem done in 6 minutes?

Cooking time can vary depending on air fryer used and type of box brownie mix. Certain types of brownies may have thinner or thicker brownie mixes. If the batter doesn’t look thick enough as you are mixing ingredients, add one tablespoon of flour to thicken the brownie batter until it has a fudgy texture. Add 1-2 minutes cooking time until the cookies are cooked to your preference.  

How can I make these cookies into a fun dessert?

You can add a scoop of vanilla ice cream in between two fudge cookies for a fun ice cream sandwich. You can also serve a cookie with a scoop of ice cream on top, and then drizzle in chocolate syrup, sprinkle with nuts, and top with whipped cream and a cherry.

Ingredients 

  • 1 box brownie mix, 18.4 ounces
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2 tablespoons all purpose flour

Instructions 

  • In a medium bowl, add the box of brownie mix. Pour in the eggs, oil, and flour. Whisk the ingredients together until the brownie mixture becomes a thick fudgy batter.
  • Use a portion scoop or a spoon to scoop the batter from the mixing bowl, and place in to the air fryer basket lined with parchment paper.  Leave about 1 inch between the cookie dough to allow room for them to spread as they cook.
  • Air Fry at 370 degrees Fahrenheit for 6 to 8 minutes.
  • Let the cookies cool to set for 2-3 minutes before removing from the air fryer basket before baked brownie cookies to plate. 

Notes

This recipes makes 24-28 cookies, depending on portion scoop or spoonful size. Allowing the cookies to rest for 2-3 minutes, gives them time to set before trying to remove them from the basket.
Optional: these cookies are delicious by themselves as a chocolate fudgy cookie. You can personalize them by adding in mix-ins such as a 1/2 cup chocolate chips, mini chocolate chips, white chips, candies, nuts, chopped peppermints, and so much more.

    We are at 6535 feet altitude were I live. Made these but added 2/3 cup roasted walnuts and used 1/4 salted butter instead of oil. I had to cook mine for 10 minutes per 6 in middle rack of power xl square air fryer. They are delicious. Definitely will be making these again. Thank you for great airfryer recipes.

    Does the air fryer need to pre-heat first?

      When baking, I never preheat the air fryer. Hope that helps.
