Air Fryer Broccoli and Carrots are lightly seasoned and absolutely delicious tender vegetables. We love this air fryer recipe because the veggies are so crisp, tender and full of flavor that even our kids love it.
This simple recipe has minimal prep time and is great on its own or as a healthy side dish. If you want to add little more flavor, you can use a seasoning of choice, or an Italian seasoning blend. With little cooking time, these air fryer vegetables are ready to serve and enjoy in minutes.
I love air frying veggie recipes. This air fryer vegetable recipe makes soft vegetables, without having to preheat air fryer. These roasted vegetables pair perfectly with almost every meal like air fryer chicken.
Fresh Air Fryer Broccoli is also easy to make with just a few simple ingredients, you will want to add this healthy side dish to all of your favorite meals.
Ingredients:
- 12oz carrots - peeled and washed
- 1 head broccoli, chopped into small florets
- 2 tablespoon avocado oil or olive oil
- 2 garlic cloves, minced or crushed
- 1 teaspoon kosher salt or coarse salt
- ½ teaspoon black pepper
How to Make Broccoli and Carrots in the Air Fryer:
- Cut, peel, and wash carrots into ½-inch angled slices.
- Cut the head of the broccoli into bite-sized florets.
- Add broccoli and carrots into a large mixing bowl.
- Add in the tablespoons of olive oil/avocado oil, minced garlic, salt, and black pepper. Mix together till the broccoli and carrots are coated.
- Transfer the seasoned vegetables to the air fryer basket and cook at 390F for 10 minutes flipping halfway through. You will have to do these in batches. Also make sure the carrots are in a single layer and not stacked on top of each other.
- Remove from the air fryer basket and serve.
I make this recipe in my Cosori 5.8 qt. air fryer or 6.8 quart air fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.
Recipe Tips and Notes:
If you don't have regular carrots, baby carrots can be substituted. Make sure to cut them in half at a diagonal.
If I'm running short on time, I love to prep veggies earlier in the day and save them until I make the meal.
For this delicious recipe, sometimes we love adding a drizzle of balsamic vinegar, some onion powder, garlic powder, parmesan cheese or a squeeze of lemon juice on top. For a little kick we sprinkle on some pepper flakes.
FAQ's:
How do I store left over carrots and Broccoli?
Before storing, make sure the carrots and broccoli are completely cooled. Put them into an airtight container or Zip Lock bag and keep them in the refrigerator for up to 4 days. When you want to reheat them, put them in a microwave safe dish before heating them up. Or since you have the advantage of air frying, you can place them back into the air fryer and cook for 2-4 minutes which will crisp them back up.
Can I use frozen carrots and broccoli?
I always love how the fresh vegetables turn out better than frozen vegetables, but you can use frozen veggies, just make sure to cook them longer so you can get that tender, crispy texture.
Can I use other vegetables with this recipe?
I've tried this with green beans, cauliflower florets cut into bite-sized pieces, yellow bell peppers or any color you prefer, butternut squash cubes, sweet potatoes, or any winter squash. Depending on what mixed vegetables you decide to use, you might need to adjust the time by adding additional minutes or cooking it less to get that perfect texture.
Do you recommend any other seasonings?
Air fryer roasted veggies are so versatile that you can always add more seasonings to find what you're looking for. Some seasoning options are, taco seasoning, Italian blend, all-natural Cajun seasoning, chili lime seasoning, bagel seasoning blend, adding your favorite seasonings or just keep it simple and season with salt and pepper.
