These air fryer stuffed taco shells are a delicious appetizer, dinner, or any time you want. You don't need an excuse to make these! Made with ground beef, jumbo pasta shells, taco seasoning, and cheese. It's like a crunchy bite sized taco that everyone will love.
I love changing things up on Taco Tuesday. I enjoy mixing pasta with tacos. In fact, one of my favorite recipes is Taco Spaghetti.
These jumbo shells stuffed with taco meat and cheese are one of my favorite appetizers. Not only are they easy to make, but they are filling!
You don't need to have a party for an excuse to make this dish.
You can make this dish adult or kid-friendly - meaning you can add onion and bell pepper or you can leave them out for the kiddos.
Ingredients:
- jumbo shells
- ground beef
- taco seasoning
- Colby jack cheese sticks
- olive oil spray
How to Make Taco Stuffed Shells in the Air Fryer
- Set a large pot of water to boil and add the jumbo shells to the boiling water. Cook until al dente.
- Brown the ground beef, stirring the taco seasoning into the beef mixture.
- Scoop a tablespoon of the ground beef into a shell.
- Top the taco meat in the shell with half of a stick of cheese.
- Cover the stuffed shell with an additional jumbo shell.
- Repeat the steps until all shells are filled.
- Place the stuffed taco shells in a single layer in the air fryer basket and spray the tops with olive oil.
- Air fry the stuffed taco shells at 350 degrees Fahrenheit for 8 minutes, or until the shells are lightly crispy and golden brown.
- Carefully remove the stuffed shells from the air fryer and serve.

Add in chopped diced onion and bell pepper to the ground beef mixture to make this dish a little more hearty and adds additional flavor.
Serve taco stuffed shells with a taco dip! You can make a simple taco dip with ½ cup of sour cream and 3 Tablespoons of taco seasonings. Stir to combine. You can also serve this dish with a queso cheese dipping sauce or fresh guacamole.
I have found 350 degrees Fahrenheit at 8 minutes is the perfect cooking time and temperature for this dish.
I love to use a Colby Jack cheese or Mexican blend of cheese. You can use your favorite cheese and make this your own.
It's normal to see that some of the stuffings in the shells do come out during the cooking process. In my experience, it is usually the cheese that will leak out between the shells, but the majority of the ingredients stay inside during the cooking process.
I love this dish and so does my whole family. It's such a quick and easy recipe and it's a great way to change things up on Taco Tuesday.

- 1 pound ground beef
- 5 sticks Colby Jack cheese
- 3 Tablespoons Taco Seasoning
