Air Fryer Casserole

I love making casseroles, and this Air Fryer Taco Casserole is a favorite. It’s quick, easy, family-friendly, and low in carbs. The kids don’t think anything of it because they love the flavors.

You can’t beat a quick and healthy dinner everyone loves to eat!

Ingredients

  • lean ground beef – I like to use 95% lean ground beef.
  • taco seasoning – use your favorite brand or a homemade taco seasoning.
  • water
  • bell pepper – diced green bell pepper, or use a red pepper for a little sweetness.
  • diced tomatoes with chilis – include the juice with this recipe, don’t drain it.
  • eggs
  • sour cream
  • heavy cream
  • shredded cheddar cheese – you can also add in some mozzarella and a little cream cheese.
  • green onions – optional, but I love the flavors!

I also used the casserole/cake pan that comes in the Cosori accessories package you can find here. You can also use any deep dish oven-safe pan that will fit into your air fryer.

Instructions

Step 1
In a medium sized skillet, brown the ground beef for 5 minutes, or until the beef is no longer pink. Drain.

Step 2
Add in bell pepper, diced tomatoes with green chilis, water, and taco seasoning to the ground beef. Simmer for an additional 3 minutes.

Step 3
Preheat the air fryer to 300 degrees Fahrenheit. Prepare the air fryer casserole dish.

Step 4
In a medium mixing bowl, whisk together the eggs, sour cream, and heavy cream until completely combined. Set aside.

Step 5
Pour the meat mixture into the bottom of the casserole dish. Add the egg mixture to the top of the meat mixture.

Step 6
Add the casserole dish to the preheated air fryer basket and cook at 300 degrees Fahrenheit for 18 minutes. Add the shredded cheddar cheese and cook for an additional 2 minutes or until the cheese is melted.

Step 7
Top with green onion tops and serve.

Variations

The best thing about casseroles is that you can interchange the ingredients and change up the flavors. Here are a few suggestions that will still keep this dish low in carbs.

  1. Choose Low Carb Vegetables: Opt for vegetables like broccoli, cauliflower, zucchini, and spinach which are low in carbs but high in nutrients.
  2. Select High-Quality Proteins: Include proteins like turkey, chicken, beef, pork, or fish. For a vegetarian option, consider using tofu or tempeh.
  3. Incorporate Healthy Fats: Add sources of healthy fats like olive oil, coconut oil, avocados, nuts, and seeds. These will help keep you full and add flavor.
  4. Use Low Carb Sauces and Seasonings: Be mindful of the carb content in sauces and seasonings. Use herbs, spices, and keto-friendly sauces to add flavor without the extra carbs.
  5. Consider Cheese and Cream: Cheese and cream are great for adding richness and flavor. Look for full-fat versions as they are more keto-friendly.
  6. Avoid Starchy Fillers: Traditional casseroles often use rice, pasta, or breadcrumbs. Substitute these with cauliflower rice, zucchini noodles, or keto-friendly breadcrumb alternatives.

Tips

Use lean ground meat and ensure you’ve drained off any remaining fat before adding to the dish.

Preheat the air fryer for this dish so it cooks correctly. If you skip the preheating process you will need additional cooking time.

Use any oven-safe casserole dish that will fit into the air fryer. I like to use large ramekins as well as the kit that came with my air fryer.

Storage and Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

To reheat, place in an air fryer safe dish and cook at 350 degrees Fahrenheit for 3-4 minutes, or until heated through.

To reheat in the microwave, place on a microwave safe plate, covered, and heat for 1 and 1/2 minutes, stirring halfway through.

Can I use ground other meats for this casserole?

If you’re looking for something other than ground beef, you can also use lean ground turkey for this keto friendly taco casserole.

Can I add additional flavors?

You can definitely add additional flavors to change up this casserole. Consider adding diced jalapeños or changing out the green pepper for a sweeter, red pepper.

Ingredients 

  • 1 lb lean ground beef, 95% lean
  • 3 tbsp taco seasoning
  • 1/4 cup water
  • 1/2 cup bell pepper, chopped
  • 10 oz diced tomatoes and green chilis, not drained
  • 4 large eggs
  • 1/4 cup sour cream
  • 1/3 cup heavy cream
  • 1/2 cup cheddar cheese, shredded
  • 1 tbsp green onions, optional

Instructions 

  • Brown the lean ground beef in a skillet over medium heat, about 5 minutes or until no longer pink. Drain.
  • Add the water, taco seasoning, diced bell pepper, and canned tomatoes with green chilis. Stir and simmer for 3 minutes.
  • Preheat the Air Fryer to 300 degrees Fahrenheit. Prepare the air fryer casserole/cake dish.
  • In a medium mixing bowl, whisk the eggs, sour cream, and heavy cream together. Set aside.
  • Pour the taco meat mixture into the bottom of the prepared casserole pan. Top the meat mixture with the egg mixture.
  • Place the casserole into the air fryer basket and cook for 18 minutes. Top with cheese and cook an additional 2 minutes, or until the cheese is fully melted.
  • Top with green onions and serve.

Notes

  1. Store in an airtight container in the refrigerator for up to 3 days. 
  2. Consider adding additional flavors like diced jalapenos for extra spice.
  3. Mix up the flavors by adding a little mozzarella and cream cheese to the dish.

    Can this be made directly in the basket of the air fryer if I donโ€™t have a casserole pan?

      You will need to have some sort of dish to place in the air fryer for this recipe. Otherwise it will seep through the grates.

    I make this but I use a chicken instead of beef. To me it taste better. Just take out the sour cream and use cream of chicken soup. Roltel Doritos I use the spicy cheese ones lol milk or heavy cream and shredded cheese mmmm
