Equipment
- 1 Air Fryer
Ingredients
- 1 pound ground chicken
- 2 Tablespoons Taco Seasoning
- 8 tortillas corn or flour
- 15 ounces black beans drained and rinsed
- 1 can enchilada sauce red
- 1 cup mexican cheese shredded
- 1 cup cilantro chopped, fresh
- ½ cup sour cream
Instructions
- Add the ground chicken to a skillet and cook over medium heat until fully cooked. Stir in the Taco seasoning.
- Top each tortilla with seasoned chicken.
- Add black beans and continue building the enchiladas with the remaining tortillas.
- Prepare the air fryer basket with a small sheet of foil that covers the bottom of the air fryer.
- Roll each of the enchiladas and place them into the air fryer on top of the foil.
- Once you have finished adding the enchiladas, top the enchiladas with the enchilada sauce.
- Sprinkle the cheese evenly over the top.
