How To Make Enchiladas in the Air Fryer

STEP 1Cook the Chicken: Brown the ground chicken in a skillet, then stir in taco seasoning.

NOTE: Make sure to put the folded side down in the air fryer so that it keeps the goodness inside as it cooks! This recipe was made with a 1700 watt basket style 5.8 qt Cosori air fryer. If you’re using a different brand of air fryer, you may need to adjust the cooking times accordingly.

Equipment

  • 1 Air Fryer

Ingredients 

  • 1 pound ground chicken
  • 2 Tablespoons Taco Seasoning
  • 8 tortillas, corn or flour
  • 15 ounces black beans, drained and rinsed
  • 1 can enchilada sauce, red
  • 1 cup mexican cheese, shredded
  • 1 cup cilantro, chopped, fresh
  • 1/2 cup sour cream

Instructions 

  • Add the ground chicken to a skillet and cook over medium heat until fully cooked. Stir in the Taco seasoning.
  • Top each tortilla with seasoned chicken.
  • Add black beans and continue building the enchiladas with the remaining tortillas. 
  • Prepare the air fryer basket with a small sheet of foil that covers the bottom of the air fryer. 
  • Roll each of the enchiladas and place them into the air fryer on top of the foil.
  • Once you have finished adding the enchiladas, top the enchiladas with the enchilada sauce.
  • Sprinkle the cheese evenly over the top.
  • Air fry the enchiladas at 350 degrees Fahrenheit for 5 minutes. Carefully remove the enchiladas from the air fryer. 
  • Optional: top with any remaining cheese, sour cream, and fresh chopped cilantro.

Notes

If you want to change up the flavors of these delicious enchiladas, you can turn these into air fryer cheesy ground beef enchiladas by changing out the chicken to beef. (I tend to go back and forth between beef and chicken because I’ll buy whatever is cheaper at the store. I can say that air fryer cheesy beef enchiladas are really good, too!)
You can add some Mexican rice to the mixture if you’d like, or just keep it as a separate side dish as well. Minute white or brown rice is fast and always pairs well.
If you want to make this low carb, use zucchini strips in the place of tortillas! This really is really versatile and easy to change up. This is also a great way to add more veggies into the day!
