CHEESE STUFFED MEATBALLS IN AIR FRYER

You will love this recipe because these delicious meatballs are perfect alone, or in a rich tomato sauce for snacks. But meatballs also make a delicious meal, especially with a family favorite pasta dish!

Cheese stuffed meatballs are perfect appetizers for guests, whether is for a potluck, party, or gameday, they can easily be made ahead of time too!

Ingredients:

  • Ground beef
  • Italian Seasoned bread crumbs
  • Parmesan cheese-shredded or grated
  • Egg
  • Garlic-minced
  • Kosher salt
  • Ground black pepper
  • String cheese-like Sargento mozzarella, Colby jack, or cheddar string cheese.

Optional Additional Stuffing: For additional flavors, add extras such as Jalapeños, fresh herbs, bacon, spinach, or chopped roasted peppers.

HOW TO MAKE CHEESE STUFFED MEATBALLS:

  1. In a medium mixing bowl, combine beef, breadcrumbs, parmesan cheese, egg, garlic, salt, and pepper. Stir until meatball mixture is well combined.

  2. Use a large spoon or cookie scoop to measure them so they are all the same size (about 2-3 tablespoons of meat).

  3. Roll each scoopful into about 2-inch sized meatballs (about the size of a golf ball). Place them on a plate or baking sheet until they are all rolled.

  4. Cut string cheese into small pieces, about 1 inch in length. Push a cheese cube into the center of each meatball, and then close them back up around the piece of cheese, by reshaping the meatball to seal in the cheese.

  5. Spray the air fryer basket with cooking spray and place the meatballs in a single layer to the basket.

  6. Air fry at 380 degrees F for 7-10 minutes, until the hamburger meat is done. Use a meat thermometer to read the internal temperature, minimum temperature should be about 160 degrees F.

I make this recipe in my Cosori 5.8 qt. air fryer. Depending on your air fryer, size and wattages, cooking times may need to be adjusted a couple of minutes.

What can I make with meatballs?

You can easily use these meatballs to make skewers, meatball subs, or spaghetti with meatballs. If you need a simple appetizer, simply serve with toothpicks!

What can I use to make crispy breading?

Pork rind breading, panko breadcrumbs and potato chips make really crispy coatings for meatballs. Day old bread that is a bit crunchy, butter crackers, Italian breadcrumbs and cheesy fish crackers are also great options.

How to store leftover meatballs?

Allow meatballs to completely cool prior to storing them. Place meatballs in an airtight container or resealable storage bag in your refrigerator for up to 4 days. Wrap them in parchment paper to freeze and then place them in an airtight container or freezer bag for up to 3 months.

What can I serve with this dish?

This dish can be served with any type of pasta that you have in your pantry with yummy sauces. These cheesy meatballs are scrumptious with a slice of Air Fryer Ranch Breadsticks or Garlic Bread.

Notes

Optional Favorite Sauce for Dipping: Because meatballs are so versatile, you can eat them with your favorite marinara sauce, pizza sauce, alfredo sauce, pesto sauce or ranch dressing.
Kitchen Tips: This recipe will make a couple of batches of meatballs. Line basket with parchment paper so meatballs won’t stick to the basket and makes for an easier clean up.
Substitutions: If you don’t have lean ground beef, you can also use ground turkey, ground lamb, ground chicken, ground pork or a lean ground beef. Mini mozzarella balls are also a great stuffer.
