We first fell in love with scones while we were traveling to England for the first time. They were served to us as part of a tea service at a fancy restaurant, because when in England, you have to do tea! They were served with jam and cream, which just made them melt in your mouth with sweetness.

Scones can sometimes be a little dry and hard to eat, which is probably why they serve them with tea. But these scones, will prove that they can be soft and delicious, complete with yummy blueberries.

What you need to make Blueberry Scones

These blueberry scones are very easy to make. They also taste amazing regardless if they are made with fresh or frozen blueberries, so you can enjoy them all year long!

I keep blueberries in the freezer on a regular basis, just for baking. I love fresh blueberries, but when we can’t eat them all before they expire, I store them in Ziploc freezer bags to keep them on hand.

Besides your air fryer and blueberries, you will need:

  • butter 
  • all-purpose flour
  • sugar
  • baking powder
  • egg
  • milk

How to make Blueberry Scones in the Air Fryer

Making these scones in the air fryer is super easy, and follows a basic scones recipe. First, you combine the butter, flour, sugar, and baking powder. Stir them together until it become slightly crumbly.

Then add in the egg, and spoonfuls of the milk, until the dough forms. Next, you will stir in the blueberries until they are mixed into the dough.

Finally, you will roll the dough out and cut with a biscuit cutter, or use a drinking glass, upside down. Place the scones into the air fryer basket, lined with parchment paper, or lightly brushed with olive oil. Cook them at 380 degrees F until they are golden brown, which is about 5-6 minutes.

***Do not use air fryer with just parchment paper by itself. It must be weighted down by the dough, or it can be a fire hazard!***

Be careful to not overmix the dough. Overworking it can make them become hard and not as fluffy.

Ingredients 

  • 1/3 cup butter, slightly softened
  • 1 3/4 cups all purpose flour
  • 1/4 cup sugar
  • 2 teaspoon baking powder
  • 1 large egg
  • 3/4 cup fresh or frozen blueberries
  • 4 tablespoon milk

Instructions 

  • In a medium bowl, combine the butter, flour, sugar, and baking powder. Stir until it become crumbly.
  • Add in the egg, and the milk, one tablespoon at a time, until the dough forms.
  • Stir in the blueberries.
  • Roll the dough, until it is about 1/2 inch thick. Cut with 2 inch cutter.
  • Place in air fryer basket on parchment paper, or lightly brushed with olive oil.
  • Cook at 380 degrees Fahrenheit for 5-6 minutes, until they are golden.

    I made this vegan using Just Egg and Oatmilk. Also added vanilla extract. Cooking time listed was not enough. On 380 for 10 minutes, it didnโ€™t even cook all the way. Top was golden but bottom was raw for some reason? Maybe temp needs to be increased.

      It also depends on what air fryer you are using, and when you change the recipe and use different ingredients, that could also be the culprit.

      Be sure to flip them over half way through cooking, then brush the new tops (that were previously the bottoms) with some more olive oil (or egg yolk wash) and finish cooking. My total time is about 9 minutes. If you don’t flip these over half way they will not cook properly. Hope this helps someone!

        Definitely always have to take into the account the type of air fryer you use. Different fryers have different wattages and you will have to adjust the cook time. But we are so gla you loved them!
