Recipe Ingredients

- Chicken: Cooked, shredded chicken.
- Onion: Diced white onion, for the flavor.
- Cheese: I used a mix of cream cheese and some shredded Mexican cheese here. You can also use mozzarella if you want to.
- Seasonings: Your favorite taco seasoning and a dash of ground black pepper. I love using my homemade taco seasoning here.
- Tortillas: I used plain flour tortillas here. You can also use corn tortillas if you want to.
- Butter: Just a little, to brush over the tortillas.

Variations
- Use leftover rotisserie chicken, chicken breast, ground beef (try my Air Fryer ground beef), or even just black beans and rice for the filling.
- Taco seasoning is great, but you can experiment with other seasonings too. Add some chili powder for a spicy kick or cumin powder for a bit of earthy deliciousness.
- Use different toppings! A dollop of sour cream, some green chilies, refried beans and Pico de Gallo are all excellent options.
How to Make Air Fryer Chimichangas

- Combine chopped onion, chicken, both cheeses and seasonings in a bowl. Mix well.

- Brush one side of each tortilla with butter. Place the butter side down and scoop 3 tablespoons of the chicken mixture into the center of the tortilla. Fold the tortilla in and roll it closed, then secure it with a toothpick.

- Transfer the prepared chimichangas in a single layer in the Air Fryer basket and air fry at 400 F for 4 minutes. Flip, and air fry for an additional 2 minutes.

- Remove the toothpicks and serve with your favorite dipping sauce.

Recipe Tips & Tricks
- Make sure you place the prepared chimichangas seal side down in the Air Fryer basket.
- Don’t fill up the basket with too many chimichangas- leave a little room for the hot air to flow through the basket and bring a bit of golden brown crispiness on the tortillas.
- To make prep these quicker, you can assemble them, wrap them up in foil and refrigerate them in an airtight container for up to 3 days. Then, simply unwrap and air fry until they’re slightly golden brown.
- For the cooked, shredded chicken for this recipe, you can make Air Fryer whole chicken or Air Fryer chicken breast, shred it and then use it!

Air Fryer Chimichangas
Equipment
- 1 Air Fryer
Ingredients
- 1 tbsp unsalted butter, melted
- ¼ cup onion, diced
- 1 cup shredded chicken, cooked
- 4 ounces cream cheese, softened
- 3 tsp taco seasoning
- 1 cup mexican cheese blend, shredded
- ¼ tsp ground black pepper
- 4 flour tortillas, 8-inch
Instructions
- Preheat the air fryer to 400 degrees Fahrenheit.
- In a small bowl, combine the onion, chicken, cream cheese, taco seasoning, Mexican blend cheese, and ground black pepper. Mix well.
- Brush one side of each tortilla with butter. Place the butter side down. Scoop 3 Tablespoons of chicken mixture into the center of the tortilla. Fold the tortilla in and roll it closed, then secure it with a toothpick.
- Repeat for the remainder of the tortillas.
- Place the chimichangas in a single layer in the basket of the air fryer. Air fry at 400 degrees Fahrenheit for 4 minutes, flip, and air fry for an additional 2 minutes.
- Remove the toothpicks and serve with your favorite dipping sauce.
Notes
- Arrange the chimichangas flap side down in the Air Fryer basket. Secure with a toothpick if necessary.
- Make sure you grease the Air Fryer basket with cooking spray to keep the tortilla from sticking to it.
- Leave a little room between the chimichangas- air fry in batches if needed.
