How to make Air Fryer Chimichangas

  1. Preheat the air fryer to 400 degrees Fahrenheit.

  2. In a small bowl, combine the onion, chicken, cream cheese, taco seasoning, Mexican blend cheese, and ground black pepper. Mix well.

  3. Brush one side of each tortilla with butter. Place the butter side down. Scoop 3 Tablespoons of chicken mixture into the center of the tortilla. Fold the tortilla in and roll it closed, then secure it with a toothpick.

  4. Repeat for the remainder of the tortillas. 

  5. Place the chimichangas in a single layer in the air fryer’s basket. Air fry at 400 degrees Fahrenheit for 4 minutes, flip, and air fry for an additional 2 minutes.

  6. Remove the toothpicks and serve with your favorite dipping sauce.

I make this recipe in my Cosori 5.8 qt. air fryer or 6.8 quart air fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.

Variations

Change up the meat – You can use leftover rotisserie chicken, chicken breast, ground beef, or even just black beans and rice to make these chimichangas. Just be sure to place them seam side down in the air fryer basket to cook.

Add seasonings – Taco seasoning is great, but don’t forget that you can also add other tasty options. Garlic powder is good, and chili powder adds a nice spicy kick!

Add toppings – A dollop of sour cream, some green chilies, a slather of refried beans, and a little bit of pico de Gallo on top sound about perfect.

How to serve

Once the chicken chimichangas recipe is done cooking, plate and enjoy. You can squeeze some fresh lime juice on top for a citrus flavor or pile high your favorite taco toppings.

How to store

If you have leftovers from this air fryer chimichangas recipe, you can store the leftovers for later. Add the leftover chicken chimichangas to an airtight container once they’re cooled, and store them for up to 2 days in the fridge.

You can then air fryer chimichangas again when ready to heat to get the outside of the tortillas hot and crispy.

How do I keep my air fry chimichangas not stick to the air fryer basket?

You can spray nonstick cooking spray in the basket if you’re worried that the bottom of tortillas is going to stick. That is the best way to ensure this chicken chimichangas recipe comes out perfectly every time! Just use olive oil spray or avocado oil, and you’re set.

Can I make this chicken chimichanga recipe low carb?

You can! Eating low carb is easy because all you need to do is use a Mission carb balance tortilla to cut down on the carbs!
