Traditional Baked Alaska desserts, are layers of cake and ice cream, covered with a layer of meringue coating. The outer coating protects the ice cream from melting, and gives the dessert a crisp shell, making it just melt in your mouth. 

You will love this baked Alaska recipe because this dessert is not only a classic, but melts in your mouth with every bite. It is easy enough to make any time, but can also be an elegant dessert served at dinner parties.

How to make Baked Alaska in Air Fryer

  1. Cut brownies into squares, about 3×3 inches in size. You can leave them in square shape, or cut into brownie circles, if you prefer.

  2. Next, scoop your favorite ice cream over the brownie, and then shape into an ice cream dome. Place brownie and ice cream in freezer while you make the meringue topping. ice cream scooped onto brownies on a wooden cutting board

  3. In a medium bowl, beat the egg whites until small glossy peaks form. Slowly add the white sugar and cream of tartar to the egg white mixture. Keep beating until a glossy stiff peak forms and the mixture thickens.Meringue beaten into glossy peaks on a wire whisk over a mixing bowl

  4. Remove brownie and ice cream from freezer. Use a spatula or wooden spoon to spread swirls of meringue, to completely coat the ice cream and brownie, covering on all sides, leaving peaks of meringue. Coating an ice cream covered brownie with meringue

  5. Place each dessert in the air fryer basket, lined with air fryer parchment paper, a small baking dish or in small ramekins that will fit in your air fryer basket. Meringue covered ice cream on brownies placed in the air fryer basket

  6. Air fry at 400 degrees F for 3-5 minutes, until the meringue is golden brown and firm.Golden crispy meringue covered brownies in the air fryer basket

  7. Serve immediately, or place in freezer to firm ice cream. (If freezing, this may make the meringue lose it’s crisp)

I make this recipe in a Cosori 5.8 Quart Air Fryer. Cooking times may vary, depending on type of air fryer. 

FAQ’s

What can I use besides a brownie?

You can place a piece of cake in center, or a brownie cookie combo. For a fresh summer flavor, you can do flavors like chewy lemon brownies, and flavored ice cream under the meringue. As long as the base is firm and can hold the ice cream and meringue. You can make Air Fryer Brownies or Air Fryer Brownie Cookies to use for this recipe too. 

Can I make Air Fryer Brownie Baked Alaska ahead of time? 

If you want to make these ahead of time, you can. Store in an airtight container in the freezer. When you are ready to serve, for crunchy meringues, use a kitchen torch right before serving.

Notes

Ice cream needs to be very firm. Keep ice cream covered brownie in the freezer for 15-30 minutes if necessary, before covering with meringue.
