I have so many delicious baking recipes, but I am trying to use the air fryer instead of a traditional oven. Especially in the hot summers. I first tried making this carrot cake in the air fryer, and then, these Air Fryer Muffins, and realized how easy it is to make desserts. 

Making delicious cupcakes is so simple. They are perfect for last minute birthday parties, or just when you want a sweet treat. I love making a batch of cupcakes for those small family parties.

When making these fluffy cupcakes, I like to switch up the cupcake flavor by just grabbing a different box mix, along with my favorite frosting. If you have an extra box mix, you can try this Air Fryer Cake too. 

Ingredients:

  • 1-15.25 Box Cake Mix (any flavor)
  • Eggs
  • Vegetable Oil
  • Water
  • Use a tub of your favorite flavor frosting to frost
  • Optional: Sprinkle tops with chopped nuts, sprinkles, or your favorite toppings.  

Making Cupcakes in Air Fryer:

  1. To make these cupcakes, prepare the box mix according to directions. For Betty Crocker Cake Mix, use a large mixing bowl, or stand mixer, combine the cake mix with eggs, oil, and water.

  2. Beat or whisk cake batter, until the ingredients are well combined. Batter should be smooth and creamy.

  3. Lightly spray the inside of the silicone cupcake holders with non-stick spray, then place them in the air fryer basket. If using a basket air fryer, you need to use silicone muffin cups. (If using muffin tins, you can use paper liners.)

  4. Pour the cupcake batter in the liners, filling them about 3/4 of the way full. Do not overfill or the fan can splatter the batter.

  5. Air fry cupcakes at 350 degrees F for 10-12 minutes. Allow cupcakes to cool before frosting.

I make this recipe in a Cosori Air Fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.

Cupcakes From Scratch Recipe

If you are looking for a taste of chocolate, try this easy Chocolate Cake Recipe using basic ingredients. 

Ingredients:

  • 1 cup all purpose flour
  • 1 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup milk
  • 1/4 vegetable shortening
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Optional: for a more decadent chocolate flavor, add 1/2 cup mini chocolate chips to the batter, and frost with chocolate buttercream.

Directions:

In a large bowl, combine the dry ingredients of flour, sugar, cocoa powder, baking powder, and baking soda.

Pour in the milk, then add the shortening, vanilla, and then egg. Beat on medium speed until all of the ingredients are well combined.

    I made your boxed cake cupcakes using a devil’s food mix. The texture of the cake was outstanding. One problem. The top of the cupcake looked like the hunchback of Notre Dame. Do you have a solution to this problem? Thank you!

      Hi! Yeah, the air fryer fan can blow the batter around and make it look like a frozen volcano. What I’ve done is use a little less batter and then also try rotating the cupcakes halfway during the air frying. As a last resort, you can just trim the tops a little to make frosting easier.
