Air Fryer Cracker Barrel Meatloaf

Because this meatloaf is made with a few extra ingredients you won’t find in typical meatloaf recipes, it is very flavorful. First, you have crushed Ritz crackers in the meatloaf, instead of the typical bread crumbs. Those little buttery crackers add so much to the flavor.

Then you have additional ingredients are diced tomatoes, and diced green bell pepper. I can’t say how, but all of the ingredients together, make for one juicy and flavorful meatloaf.

What you need to make Air Fryer Meatloaf

  • Ground Beef
  • eggs
  • Ritz Crackers
  • milk
  • white onion
  • green bell pepper
  • diced tomato
  • salt and pepper
  • ketchup
  • brown sugar
  • mustard
  • Worcestershire sauce

Making Meatloaf in the Air Fryer

Because you really just need to stir the ingredients together and shape it into the loaf, this meatloaf is pretty easy to make and cook in the air fryer. I chose to shape it, and place it on parchment paper to cook.

In a large bowl, add the ingredients together. Once all of the ingredients are combined, place it in the air fryer basket. I cook mine at 380 degrees Fahrenheit for about 20 minutes, then I add the glaze and cook it for an additional five minutes.

Keep in mind if you make this meatloaf in a bread pan, you may need to adjust your cooking time for a few extra minutes.

Once the meatloaf was done, let it rest for a few minutes, and then carefully remove it out of the basket to place it on the plate.

What temperature is a meatloaf fully cooked?

The best way to confirm the meatloaf is ready, is to use a digital thermometer. The internal temperature should be 160 degrees Fahrenheit.

What should I do if the top of my meatloaf is cooking faster then the inside?

In the air fryer, this can sometimes happen, depending on where your basket sits. You can cover the top of the meatloaf with foil.

Equipment

  • Air Fryer

Ingredients 

  • 1 1/2 pounds lean ground beef or sirloin
  • 2 large eggs
  • 1 cup crushed Ritz Crackers
  • 1/4 cup milk
  • 1/2 medium onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 14.1 ounces canned diced tomatoes, drained
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Meatloaf Sauce

  • 1/2 cup ketchup
  • 2 tablespoon brown sugar
  • 1 teaspoon mustard
  • 1 teaspoon Worcestershire Sauce

Instructions 

  • In a large bowl, combine the ingredients for the meatloaf, stirring until they are well combined.
  • Shape the meatloaf on top of parchment paper and place in the air fryer basket.
  • Cook at 380 degrees Fahrenheit for 18-20 minutes.
  • Brush meatloaf sauce on top of the meatloaf, and cook at 380 degrees F for an additional 3-5 minutes.

Notes

Be sure to drain the tomatoes! The first time I made this, I was so excited to try it, I forgot to drain them and had to add more Ritz crackers to adjust for the extra liquid.
