Ingredients

  • Russet Potatoes 
  • Olive oil 
  • Paprika 
  • Salt 
  • Garlic powder 
  • Black pepper 
  • Shredded cheddar jack cheese

How to make Air Fryer Cheesy Potatoes

  1. To make this recipe, begin by rinsing and cutting the potatoes into wedges, leaving the potato skin on. 

    Potatoes cut into wedges and placed into a bowl.

  2. Add the cut potatoes to a medium bowl, and cover with cold water. Let them soak in the cold water for 25-30 minutes. This will remove the starch and makes them crispy. 

  3. Once they have soaked, drain the water and pat the sliced potatoes dry with paper towels. Return them to the bowl.

  4. Coat potatoes with a tablespoon of olive oil, paprika, salt, garlic powder, and pepper. Mix until coated evenly.

  5. Place the seasoned potato wedges into a single layer in the air fryer basket without overlapping.

  6. Air fry the potatoes at 400 degrees Fahrenheit for 20-23 minutes. 

  7. During the cooking process, shake the basket at the 10-minute mark. If you have larger wedges, you may need to add 2-3 extra minutes for cooking time. 

  8. Open the basket and sprinkle the cheese onto the potato wedges. Air fry the cheese-covered potatoes at 400 degrees Fahrenheit for 2 minutes, or until the cheese is melted and starting to golden.

  9. Remove the cheesy potatoes from the basket with a spatula and serve with ranch dipping sauce.

NOTE: I make this recipe in my Cosori 5.8 qt. air fryer or 6.8 quart air fryer. Depending on your air fryer, size and wattages, cooking time may need to be adjusted 1-2 minutes.

Variations

Add additional toppings – Everything goes with shredded cheese! If you don’t want to do shredded cheese, you can add nacho cheese, and then add crispy bacon crumbles, diced bell peppers, taco seasoning, ranch seasoning, parmesan cheese, bacon bits, and even some sour cream.

Use different potatoes – You can easily copy this recipe with baby potatoes, larger potatoes, or different cuts and styles.

How to Serve

This great side dish is simple to prep and serve. Once you cook the potatoes and the cheese melts, it’s really all about adding whatever you’d like to the top of those crispy potatoes. Pile high on a plate and enjoy the recipe as is or make cheesy bacon potatoes with a fun twist.

How to Store

Leftover air fryer potatoes need to be stored in the fridge in an airtight container or covered with plastic wrap. If you want to get the outside of the potato nice and crispy when reheating, you can pop them back in the air fryer.

FAQs

Do I leave the potato skins on?

You do! This is what holds the wedges in shape and gives a crispy skin!

You can still make this easy recipe if you take off the skin, but the texture will be different.

Why do I need to soak potatoes?

This helps to remove some of the starch, which in turn makes the potatoes nice and crispy! It’s an important step to do when you’re cooking potatoes in the air fryer.
