– 1 eggplant sliced into 1.4 inch rounds – 1 egg – ½ cup panko breadcrumbs – ½ cup all-purpose flour – ¼ cup parmesan cheese freshly grated – ½ teaspoon sea salt – ½ teaspoon ground black pepper
Preheat the Air Fryer to 370 degrees F. Sprinkle the eggplant slices with salt on both sides and place in a large colander to drain for 30 minutes. Whisk the egg in a shallow bowl. Set aside.
