– 2 ears of corn fresh – 1 Tablespoon butter unsalted – ¼ teaspoon garlic powder – ¼ teaspoon salt Kosher – ½ teaspoon smoked paprika – ½ teaspoon ground black pepper – ½ teaspoon dried parsley – fresh parsley for garnish
Take each whole ear of corn, remove from the husk. Rub cobs to remove the corn silks from in between the corn kernels and cut off the ends. Place corn on the cobs in a microwave safe bowl covered with a damp paper towel and microwave for 2 minutes. Let corn cobs cool for 5 minutes on a chopping board or until they are cool enough to touch. Use a sharp knife and slice into the corn cobs: cut the corn in halves lengthwise, and then cut halves into quarters, to make 4 pieces per cob of corn.
In a small bowl, combine butter, garlic powder, salt, paprika, black pepper and dried parsley. Brush the corn ribs with the seasoning mixture, coating entire corn rib well.
